This Chicken Parmesan Bubble Up is one of our favorite meals for busy weeknights. All the flavors of chicken parm without all of the frying! Chicken, marinara sauce, and mozzarella tossed with biscuits and baked. All you need is a side salad and you have a meal that is better than any Italian restaurant!
What does Bubble Up mean?
Bubble up refers to casseroles made with refrigerated biscuits. The biscuits bubble up when they are baked. I’ve made several bubble up casseroles for the blog – pizza, peach cobbler, and even an enchilada bubble up casserole. They are all fantastic.
How to Make Chicken Parmesan Bubble-Up Casserole with Biscuits
This casserole is super to make with only a few simple ingredients. Open two cans of refrigerated biscuits. Cut each biscuit into four pieces and place in a large mixing bowl. Add frozen popcorn chicken, marinara sauce, and mozzarella cheese. Season with salt and pepper, if desired. Stir to coat all ingredients in the pasta sauce. Spray a 9×13-inch baking dish with cooking spray. Transfer the chicken mixture to the prepared casserole dish. Top the chicken and biscuits with more mozzarella cheese and grated parmesan cheese. Bake in a preheated oven until the biscuits are cooked through. Garnish the casserole with parsley or fresh basil before cutting it into slices.
Helpful Tips & Frequently Asked Questions
- You can use frozen popcorn chicken or frozen breaded chicken breasts.
- If using frozen breaded chicken breasts, cut them into bite-sized pieces.
- There is no need to cook the chicken ahead of time. Frozen breaded chicken is already cooked. It will reheat while the casserole bakes.
- I use two cans of the smaller 5-count (6-oz) can of biscuits. I did NOT use the bigger Grands! biscuits.
- Make sure to spread the biscuits around in the pan so they aren’t all clumped together. This will ensure the biscuits bake and aren’t doughy when you pull it out of the oven.

Chicken Parmesan Bubble Up
Ingredients:
- 1 pound frozen popcorn chicken
- 1 (24-oz) jar spaghetti sauce
- 2 cups mozzarella cheese, divided
- 1/4 cup parmesan cheese
- 2 (6-oz) cans refrigerated biscuits (10 total biscuits)
Instructions:
- Preheat oven to 375ºF. Lightly grease a 9x13x2-inch pan with cooking spray. Set aside.
- Cut biscuits into quarters. Place in medium bowl. Toss biscuits with spaghetti sauce, chicken and 1 cup of mozzarella cheese. Pour mixture into prepared 9×13-inch pan. Top with remaining cheese.
- Bake for 35-40 minutes, or until biscuits are done.

Hi, I made this the past weekend, was a hit, the only change I made was I used frozen bread sticks instead of the biscuits, cut them up in chunks as in the recipe, my husband loved this and it was easy and quick. Smelled great, but alas I am on KETO so I didn’t get to taste it.

Delish! We used Tyson Simply Smart Lightly Breaded Chicken Strips. We loved it! It tasted just like chicken parmesan! I love that you just mix it all together and bake!
I really wanted to make this but we lost power for 3+ days. By the time power was back on. I lost my chicken.
So decided I'd just make it without the chicken. It was still good.
Now for the next try (today) First when I went to the store I got what I needed (so I thought) I had both the Lasagna and chicken bubble up in my memory. I got the sausage crumbles AND chicken. So today, as I was putting it all together….ding ding ding I realized I had mixed up my brain. So, this is what I did.
I used ricotta. red pepper and used the chicken because it was already thawed.
I DIDN'T use the sausage and forgot about the cheese
It was very good.
Now a NOTE for the chicken………I just saw Steph used 16 oz popcorn chicken (not in my memory) I was looking for nuggets. MY nuggets were supposed to be Tyson's but when I read the bag they were formed, I decided to find regular nuggets, So, I found Purdu to use…ALSO I thought it was 28 oz, so they were really too much.
LOL, I know next time I'll take a list with me.

Sounds like you didn't bake it long enough. Did you use Grands or grands jr biscuits. Grands are bigger, so it will take longer to cook.

I have seen so many variations on "Bubble" recipes, I'm wondering, does the biscuit stay doughy and feel slimy or does it cook all the way through, throughout the dish? It looks and sounds so good.
