Muffin Pan Chicken Parmesan

These quick Chicken Parmesan Cupcakes has all the flavors of chicken parm without all the work. No breading and frying the chicken. You are going to use frozen popcorn chicken in this recipe. SO quick and easy. I made these into individual serving by using a muffin pan. I wanted to be able to freeze the leftovers. These “cupcakes” come together in no time. The hardest part is cutting the dough into 12 squares. 

How to Make Chicken Parmesan Cupcakes

These savory cupcakes are super easy to make. Start with cutting crescent roll dough into 12 squares. Press the dough into a muffin pan. Sprinkle some mozzarella cheese into the bottom of each muffin cup. Top with frozen chicken, spaghetti sauce, and parmesan cheese. Pop them in the oven and bake.

  • I used Tyson frozen popcorn chicken for this recipe. I tried to use the bigger pieces in the bag for each cupcake. If I had a small piece, I used two pieces. I wanted to make sure there was lots of chicken in each cup.
  • There is no need to precook or thaw the frozen chicken before baking. It will cook along with the crescent rolls.
  • Can substitute a can of refrigerated pizza dough for the crescent rolls.
  • My favorite jarred spaghetti sauces are Trader Joe’s Roasted Garlic Marinara (green label), Rao’s, and La Famiglia DelGrosso.
  • You can use shredded or grated parmesan cheese. The green can stuff is perfectly fine.
  • Can freeze leftover cupcakes for a quick snack later.

Equipment:

Ingredients:

  • 1 (8-oz) can refrigerated crescent dinner rolls
  • ¾ cup shredded mozzarella
  • 12 pieces frozen popcorn chicken
  • cup spaghetti sauce
  • ¾ cup shredded Parmesan cheese

Instructions:

  • Preheat oven to 375ºF. Spray 12 regular size muffin cups with cooking spray. Set aside.
  • Remove dough from can; press seams to seal and press into an 8×18 inch rectangle. Cut dough into 12 squares. Press squares into muffin pan cups.
  • Place 1 tablespoon of mozzarella cheese in the bottom of each muffin cup. Place chicken pieces on top of cheese; top each piece of chicken with 2 tablespoons spaghetti sauce. Sprinkle with shredded Parmesan cheese.
  • Bake 15 to 18 minutes, or until golden brown.

    1. you could also use refrigerator bisquits and make a cup out of baking the bisquit on the OUTside of the muffin cup and make your larger, dinner-size cup! 🙂 I used to make Mexican meat cups this way, and my kids loved them!
