How to Make Chicken Cordon Bleu Casserole
This casserole is very easy to make with only a few simple ingredients. In a large bowl, stir together cream of chicken soup, thawed mixed vegetables, sour cream, shredded sharp cheddar cheese, cooked chopped chicken, onion powder, and garlic powder. Season with salt and black pepper. Pour the chicken mixture into a baking dish sprayed with cooking spray. In a small bowl, melt butter. Add crushed Ritz crackers and stir to coat. Sprinkle the crackers over the top of the casserole. Bake uncovered in the oven until bubbly. Garnish with parsley.

Ingredients:
- 4 cups cooked chopped chicken
- 1 (10-oz) package frozen mixed vegetables, thawed
- 1½ cups sour cream
- 1 cup shredded cheddar cheese
- ½ tsp onion powder
- ¼ tsp garlic powder
- 1 (10.5-oz) can cream of chicken soup
- ¼ cup butter, melted
- 1 sleeve Ritz crackers
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray.
- Combine chicken, vegetables, sour cream, cheddar cheese, onion powder, garlic powder, and cream of chicken soup. Spread into prepared pan.
- Combine crushed crackers and melted butter. Sprinkle over chicken mixture.
- Bake uncovered 30 to 40 minutes.

I just pulled this out of the oven and my family LOVES it!! I made rice to go under it 😉 Thank you for sharing this recipe! I have been craving chicken pot pie for a few months now but have never found a recipe I actually like, so this recipe is the fix I needed, and it is SO easy to make! I seasoned four chicken breasts with Auntie Nono’s everything seasoning on both sides, then cooked them on high in my crock pot for two hours, then on low for another five hours, and they turned out super tender and they shred so easily. I only ended up using two of them for this recipe, so I am going to have to pick another of your chicken casseroles to use up the other two breasts 😉 We have loved every recipe that we have tried from your site…you ROCK <3

Could potentially replace the sour cream with plain Greek yogurt. Hope this helps.
