This Chicken Pot Pie Quiche is comfort food at its best! Quiche is one of our favorite meals. Chicken Legs is always requesting it for lunch or dinner. Since we love quiche, I’m always thinking of new flavor combinations to try out. I was craving chicken pot pie, so I decided to give it a try in quiche form. WOW!! SO good!!
This quiche is unique in that it has a can of cream of chicken soup in the egg mixture. I know it sounds weird, but the soup makes delicious quiche. You just have to trust me on this. I promise it is wonderful! We ate this for lunch and had the leftovers for dinner the same night.
How to Make Chicken Pot Pie Quiche
This is super easy to make. Spread chopped cooked chicken and frozen mixed vegetables in the bottom of a frozen pie crust. Top with cheese. Whisk together eggs, cream of chicken soup, and milk. Pour over cheese and bake.

- There is no need to thaw the frozen mixed vegetables before adding them to the quiche.
- I did not thaw or precook the frozen pie crust before filling it.
- You can use a frozen or homemade pie crust. Either is just fine.
- Can Homemade Quiche be made in advance? Yes! You can assemble the quiche ahead of time and refrigerate it overnight.
- Can Homemade Quiche be frozen? Yes! You can make this quiche ahead of time and freeze it baked or unbaked for later.
- I prefer to freeze the quiche unbaked. Assemble the quiche and place in the freezer. Once the quiche is frozen place it in a freezer bag. When ready to bake, thaw the quiche in the refrigerator before baking as directed below.
- To freeze the baked quiche, cool the quiche completely and wrap the pie plate with plastic wrap and aluminum foil. When ready to reheat, thaw and reheat in the oven or microwave before serving.
- How long will Homemade Quiche last? The quiche will keep 3 to 4 days covered in the refrigerator.

What to Serve with Quiche
We served this quiche with some biscuits. YUM! It is also great with some grits or a salad. Give this a try for brunch, lunch, or dinner. You might want to double the recipe. This doesn’t last long!

Chicken Pot Pie Quiche
Ingredients:
- 1 cup cooked chopped chicken
- 3/4 cups frozen mixed veggies
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
- 1/2 cup milk
- 1 (9-inch) frozen deep-dish pie crust
Instructions:
- Preheat oven to 350ºF.
- Spread chicken and vegetables in bottom of frozen pie crust. Top with cheese.
- Whisk together eggs, cream of chicken soup and milk. Pour over cheese.
- Bake for 50-60 minutes, until center is set.

When you say frozen vegetable would you tell me what you used?
There is a package in the frozen section that says frozen mixed vegetables.
So mine comes out runny? I even baked over an hour. Any suggestions?
Bake it longer or at a slightly higher temperature. Mine always take just at an hour.
I added onion, garlic & broccoli for the veggies, that’s what I had on hand. Also used half & half rather than milk. It was easy to pull together & tasty. Would definitely make again.
