It is perfect for a hectic weeknight or potluck. Add this to your menu. It is sure to become a family favorite!

How to Make Chicken Pot Pie Rice-a-Roni Casserole

This casserole is super easy to make with only a few simple ingredients. Cook Rice-a-Roni according to the package directions. Melt butter in a large skillet over medium heat. Add pasta and vermicelli mix to the skillet and cook until golden brown. Add water and rice-a-roni seasoning packet. Bring contents to a near boil. Reduce heat and simmer until the liquid is absorbed and the rice is tender.

While the rice-a-roni cooks, combine sour cream and cream of chicken soup in a large bowl. Stir in frozen mixed vegetables, shredded cheese, onion powder, garlic powder, and chopped chicken. Stir the cooked rice into the soup mixture. Season with salt and black pepper, if desired. Pour the chicken mixture into a baking dish that has been sprayed with nonstick cooking spray.   • Prepare Rice-A-Roni according to package directions.
  • In a large bowl, combine soup, sour cream, garlic, onion powder, chicken, mixed vegetables, and cheese. Add cooked rice and stir until well combined.

  1. We really liked this! I made your homemade rice-a-roni and it was fantastic! I didn’t have enough sour cream so used some French onion dip left over from NYE and that was really good in it also. Thank you for this recipe. Definitely a keeper!
