I found this recipe on Tasty Kitchen.  I immediately knew I had to try it because it combines three of my favorite foods – chicken, rice-a-roni and French fried onions!  This was super quick and easy.  I used rotisserie chicken and this was ready in no time flat.  We both really enjoyed this; especially the crunchy onions on top.

  1. So good! The whole family loved this. Super fast and easy recipe. We will definitely make this again!

  2. I rarely leave reviews for recipes but I just had to let you know my husband and I loved your recipe for chicken rice-a-roni casserole. I accidently put the rice seasoning in with the chicken, sour cream and soup but it didn’t matter. It turned out perfect. And the oven timing was perfect too. The onions on top didn’t burn at all. I served it with broccoli but was thinking maybe I’d add it to the recipe next time – – and there will be more next times. Thank you, Stephanie!!

  3. Amazingly delicious!!! Wasn’t sure it would be, seemed like a lot of sour cream. Don’t change a thing!!!

  4. A facebook friend posted this and said it was cheap and good! I made it and and loved the simplicity, as well as the taste. My picky daughter loved it too and was asking for the leftovers the next night . Thank-you!

  5. Trying it this evening… chicken, Mexican flavor rice a roni, black beans, cream of chicken soup. Will update with the results

  6. This was very easy my suggestions would be 2 boxes of the Rice a Roni being that we like ours a little more meaty fixed as written it was more of a thick soup type consistency. VERY GOOD tho we enjoyed it and makes enough for a family!

  7. I just made this and threw in a half a bag of frozen peas (So I could pretend it's healthy, ha!) It was amazing! Thank you!

  8. This casserole is excellent, especially if the purse strings are pulled real real tight. My kids and hubby enjoyed this casserole, as did I. In my opinion, however, it does not make very good leftovers.

  9. Both hubby & I loved this! Today I substituted ground beef for the chicken, beef flavor Rice-a-Roni for the chicken, and cream of mushroom soup for the cream of chicken. It was just as good…..just a variation. 🙂

  10. I remember my mom made this growing up. But I think it had ground beef. So I'm not sure what the change (if at all) would be for the cream of soup?? Wow. Throwback to the 90s. Now I want this!

  11. My family of (4) loved this the first time I made it … however it makes SO much! Do you think I could split it into two casseole dishes and freeze one? Wasn't sure about freezing sour cream??!!

  12. Found this on Pinterest! I was not expecting it to be so so so yummy! I made it for dinner last night and had leftovers for lunch today and reheated for dinner again tonight! mmmmmm delish!

  13. Just found your blog through pinterest. We live in Bham as well! Can't wait to try out several new recipes…thanks for the inspiration! 🙂

  14. Looks really good Steph. Bev likes to start with Rice a Roni for Spanish rice. We should be passing thru your neck of the woods later this AM on the last leg of our trip home.

    1. Made it tonight. Didn’t have rotisserie chicken so chopped some boneless thighs and browned them. Used rice pilaf as that was what I had on hand. Used cream of chicken with herbs – again what I had. Used the sour cream and fried onions lol. Came out delicious!!!
