Breakfast casseroles are a favorite at our house. We eat them for breakfast, lunch, and dinner. This Fried Chicken & Waffles Casserole is always a hit. This is super easy to make and has tons of great flavor. Only five ingredients – waffles, frozen popcorn chicken, eggs, milk, and maple syrup. You can make this casserole ahead of time and refrigerate it overnight. I love easy make-ahead meals like this! Whip up some grits and bacon and you are set!
How to Make Chicken & Waffles Casserole
This casserole is very easy to make with only a few simple ingredients. Start with toasting some frozen waffles and cutting them into cubes. Partially thaw some frozen popcorn chicken and chop it into bite-sized pieces. Layer the waffles and chicken in a baking dish. In a large bowl, whisk together eggs, milk, and maple syrup. Pour the egg mixture over the chicken and waffles and bake until golden brown. Serve the casserole with some melted butter and syrup.
Helpful Tips & Frequently Asked Questions
- I use Eggo Homestyle Waffles. I like to toast the waffles in the toaster or in the oven on a baking sheet before adding them to the wet ingredients. This isn’t necessary, but I find it gives the casserole a better texture.

- I use Tyson popcorn chicken. Just Bare Chicken nuggets from Costco are also great.
- There is no need to bake the frozen chicken before adding it to the casserole dish. It will bake along with the casserole.

- Can Chicken & Waffles Casserole be made in advance? Yes! You can assemble the casserole and refrigerate it for a few hours to overnight.
- Can Chicken & Waffles Casserole be frozen? Yes! Assemble the casserole. Cover the dish with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and bake as directed.
- To freeze the baked casserole, bake as directed and cool completely. Cover the dish with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and reheat covered in the oven or in the microwave until warm.
- I like to brush the baked casserole with extra maple syrup. This is totally optional but totally delicious!

Equipment:
Ingredients:
- 16 frozen Eggo homestyle waffles
- 1 (25.5-oz) package frozen popcorn chicken, partially thawed
- 12 large eggs
- 1½ cups whole or low-fat milk
- ½ cup real maple syrup
Instructions:
- Preheat oven to 350ºF. Grease a 9×13-inch baking dish.
- Slightly thaw the popcorn chicken and chop into bite-sized pieces.
- Toast waflles according to package directions and cut into cubes.
- Add half of the cubed waffles in a single layer. Top with half of the chicken pieces. Layer the remaining waffles and chicken.
- Whisk together the eggs, milk, maple syrup, salt, and pepper in a medium bowl until combined. Pour the egg mixture evenly over the casserole.
- Bake for 50 to 60 minutes.

Diabetic so do you suppose it would alter the recipe terribly to use a sugar-free pancake syrup?

I only use REAL maple syrup. NOT pancake syrup.
