Stop what you are doing and add this Chicken & Wild Rice Casserole to your menu! This casserole is SOOOOO good! It was that good! It reminded me of Chicken Tetrazzini with rice instead of pasta. I happen to LOVE chicken tetrazzini, so I was a huge fan of this chicken & rice casserole. We ate this for lunch and leftover for dinner on the same day. Whip up some green beans and biscuits and dinner is done!
How to Make Chicken & Wild Rice Casserole
This Chicken & Wild Rice Casserole is super easy to make. You basically just mix everything together, spread into a baking dish, and bake. White and wild rice, chicken, cream of chicken soup, cream of mushroom soup, sour cream, milk, and parmesan cheese. Top the casserole with some crushed Ritz crackers and butter. Pop it in the oven and you are set!
The base of the casserole is pouches of Uncle Ben’s pre-cooked white & wild rice. I used a rotisserie chicken for the cooked chicken in the recipe. Rotisserie chicken is my secret weapon in the kitchen. It makes casseroles like this one a snap to make.
Can Chicken Casserole Be Frozen?
You can make this chicken casserole ahead of time and refrigerate or freeze for later. If baking the casserole straight from the refrigerator, you may need to add a couple of minutes to the cooking time. To bake the casserole after freezing, thaw completely overnight in the refrigerator and bake as directed below. To reheat the baked casserole after freezing, thaw completely overnight in the refrigerator. Either pop the casserole in the microwave or cover and bake at 350ºF for 30 to 40 minutes.

Chicken & WIld Rice Casserole
Ingredients:
- 4 cups cooked chopped chicken
- 4 (8.8-oz) bags Ben's Ready White & Wild Rice
- 1 (10.5-oz) can cream of chicken
- 1 (10.5-oz) cream of mushroom
- 8- oz sour cream
- 1 cup milk
- 6- oz shredded parmesan cheese
- ¼ tsp garlic powder
- ¼ tsp onion powder
- salt & pepper to taste
- 1½ sleeves Ritz crackers crushed
- ½ cup butter melted
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray. Set aside.
- Combine chopped chicken, rice, cream of chicken soup, cream of mushroom soup, sour cream, milk, parmesan cheese, garlic powder, onion powder, salt and pepper. Spread into prepared baking dish.
- Combine crushed Ritz crackers and melted butter. Sprinkle evenly over casserole.
- Bake uncovered for 40 to 50 minutes

Made this tonight – I was a little hesitant because hubby is so picky! But he has LOVED every recipe that I have made from your site, Stephanie. And this was a hit! It was delicious, and he LOVED it! Went back for seconds, as did I! The only change I made was to sprinkle the shredded Parmesan cheese on top for the last 20 minutes, instead of mixing it in, because I didn’t have enough. Is the rice raw when mixed with the other ingredients?
No – it is bags of Uncle Ben’s Ready Rice. It is microwavable rice in bags.
Is the ounces of Parmesan by weight? I have a block I am grating myself. 6 oz grated has equaled about 2 cups. Thanks

The Uncle Ben’s Ready Rice package says there are 2 cups per package. So that would be 8 cups total for this recipe.
Do you prepare your ready rice by microwaving it before adding it to the recipe?
