I can not begin to tell you how tasty these Chipotle BBQ Chicken Taquitos were. The smokiness of the chipotle combined with the sweetness of the BBQ sauce was divine!
These are so easy to make. I used half of a rotisserie chicken and the filling was ready in minutes. You can also prep the filling the night before and just store it in the fridge if you are pressed for time. These do have a little kick from the minced chipotle peppers. You can control the spiciness by adding more or less peppers. I topped the taquitos with some Ranch dressing and dried cilantro. Delicious!
Chipotle BBQ Chicken Taquitos

3 cups cooked chopped chicken (half rotisserie)
3 chipotle peppers in adobo, minced
¾ cup BBQ sauce (Sweet Baby Ray’s)
1 cup monterrey jack cheese, grated
16 corn tortillas
kosher salt
Preheat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
Combine chopped chicken, minced chipotles and BBQ sauce. (You can prepare up to this step ahead of time and store in the refrigerator.)
Heat the tortillas in the microwave for 20-30 seconds. This will make sure they are easy to roll up and not crack.
Place 2-3 T of chicken mixture on the tortilla, top with some grated cheese. Roll up as tight as you can.
Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray and sprinkle some kosher salt on top.
Bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Do you remove the seeds from your chipotles before dicing?
