This Cinnamon Pull-Apart Bread is a new favorite at our house. Layers of puff pastry, cinnamon, and sugar with a drizzle of maple glaze. YUM! I made this for brunch with friends and it was gone in a flash! This is simple to make and makes a great presentation on the table. SO, skip the can of cinnamon rolls this weekend and whip up this yummy bread!
How to Make Cinnamon Pull-Apart Bread
This recipe is super easy to make with only a few simple ingredients. Line a loaf pan with parchment paper and spray with cooking spray. In a small bowl, combine brown sugar and cinnamon. Set aside. Unfold a puff pastry sheet. Roll the pastry sheet into a 12×10-inch rectangle.
Brush the pastry sheet with melted butter and sprinkle with cinnamon-sugar mixture. Top with chopped pecans. Lightly press the toppings into the pastry. Cut the puff pastry into 4 (10×3-inch) strips. Stack the strips on top of each other making one 4-layer stack. Cut the stack crosswise to form 4 stacked squares.
Place the stacked squares on their sides in the loaf pan. Repeat with the remaining pastry sheet. Bake bread in a preheated oven until golden brown. Remove the bread from the pan and cool on a wire rack for an hour.
In a medium bowl, stir together powdered sugar, maple syrup, and milk. Place the bread on a serving plate and pour the glaze over the bread and enjoy!
- Can use brown sugar or granulated sugar.
- You can omit the pecans if you don’t like nuts.
- You can use salted or unsalted butter in this recipe.
- Store leftovers at room temperature in an airtight container.

Bread
- 1 (17.3-oz) package puff pastry, thawed
- ¼ cup melted butter
- 4 Tbsp brown sugar
- 1 Tbsp cinnamon
- ¼ cup finely chopped pecans
Glaze
- ⅔ cup powdered sugar
- 1 Tbsp maple syrup
- 1 Tbsp milk
Instructions:
- Preheat oven to 375ºF. Spray a loaf pan with cooking spray and line with parchment paper.
- In a small bowl, combine brown sugar and cinnamon.
- Unfold one puff pastry sheet and roll into a 12×10-inch rectangle.
- Brush the pastry sheet with half of the melted butter and sprinkle with half of the cinnamon-sugar mixture. Top with half of the chopped pecans. Lightly press the toppings into the pastry.
- Cut the puff pastry into 4 (10×3-inch) strips. Stack the strips on top of each other making one 4-layer stack. Cut the stack crosswise to form 4 stacked squares. Place the stacked squares on their sides in the loaf pan.
- Repeat with the remaining pastry sheet.
- Bake for 55 to 60 minutes. Remove the bread from the pan and cool on a wire rack for an hour.
- Stir together powdered sugar, maple syrup, and milk. If the glaze is too thick, add more milk or syrup.
- Place the bread on a serving plate and drizzle the glaze over the top of the bread.

Could this recipe be baked ahead and frozen or assembled then frozen?
I haven’t tried freezing this recipe, so I can not say. My guess is yes, but I haven’t tried it.
