This might be the perfect cookie for our house. I love peanut butter anything and Chicken Legs loves Oreos. This was the best of both worlds – a Cookies & Cream Peanut Butter Cookie!
I actually made these cookies for a belated birthday present for a friend. Luckily, this made a ton of cookies. I filled a box up for my friend (one for her, two for Chicken Legs) and saved a few for us. These didn’t last long in our house. I think Chicken Legs’ self control lasted all of 2 days (including baking day).
If you want a really quick cookie – use a bag of peanut butter cookie mix or roll of peanut butter cookie dough and mix in the crushed Oreos. Easy peasy!
Cookies & Cream Peanut Butter Cookies
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 1/4 cup All Purpose Flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
12 Oreo cookies, crushed
Preheat oven to 375.
In a large mixing bowl, beat butter and peanut butter with an electric mixer on medium speed for 30 seconds. Beat in the egg and vanilla. Add the granulated sugar, brown sugar, baking soda, baking powder and flour. Beat until combined, scraping sides of bowl occasionally. Add crushed Oreo cookies and mix until combined.
Shape rounded tablespoons of dough into balls (small cookie scoop). Roll balls in additional granulated sugar to coat. Place balls 2 inches apart on an ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar. Bake for 7 to 9 minutes or until bottoms are lightly browned.
