It tailgating time again! I’ve seen these corn dog muffins all over Pinterest and decided to give them a try. I made the cornbread from scratch, but you could use a box of cornbread mix if you prefer. These are super quick to make and taste delicious! Chicken Legs doesn’t like hot dogs but agreed that these corn dog muffins were excellent. They are great for game day or even dinner. Serve them with some mustard or ketchup for a crowd-pleasing great snack!
How to Make Mini Corn Dog Muffins
This recipe is super easy to make with only a few simple ingredients. Cut hot dogs into six pieces. Set aside. In a large bowl, whisk together eggs, buttermilk, honey, and melted butter. In a separate bowl, combine all-purpose flour, baking powder, salt, and yellow cornmeal. Add dry ingredients to wet ingredients and stir to combine.
Spray a mini muffin tin with nonstick cooking spray. Divide the cornbread batter between the mini muffin cups. Place one hot dog piece into the middle of each muffin cup. Bake the corn dog bites in a preheated oven until golden brown.
- You can use any brand of hot dogs that you enjoy.
- Turkey dogs also work great.
- Feel free to stir in some shredded cheddar cheese into the cornbread batter.
- Can I freeze Corn Dog Muffins? Yes! Bake the bite and cool completely. Place cooled corn dog muffins in a freezer bag and freeze. To reheat, thaw and reheat in the microwave or covered in aluminum foil in the oven.
- Store leftovers in an airtight container in the refrigerator.

Corn Dog Muffins
Ingredients:
- 2 large eggs
- 1¼ cup buttermilk
- ⅓ cup honey
- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1¼ cups yellow cornmeal
- 8 hot dogs or turkey dogs
Instructions:
- Preheat oven to 400ºF. Lightly spray a mini-muffin pan with nonstick spray.
- Cut each hot dog into 6 1-inch pieces.
