Easy Cheese Dip Recipe

I made this Cowboy Queso for the first football game of the season. It was SO good that we made it again the next week. I seriously can’t get enough of this dip! Queso cheese dip loaded with meat, beans, Rotel tomatoes, and corn. I could literally make a meal out of this! Heck, I did make a meal out of this the first time we made it. LOL!

How to Make Cowboy Queso

This dip is super easy to make. Start with browning some ground beef in a skillet. Transfer the cooked meat to a large microwave-safe dish. Add chopped Velveeta cheese, Rotel tomatoes, chili beans, black beans, corn, milk, onion, chili powder, garlic, oregano, cumin, and hot sauce. Microwave the dip until the cheese has melted.

  • Can substitute ground turkey or sausage for the ground beef.
  • Feel free to use any beans you prefer. I used chili beans and black beans. This would also be good with kidney beans.
  • Is Cowboy Queso spicy? There is a small kick from the Rotel diced tomatoes and green chiles. Make sure to use a can of MILD Rotel if you have a sensitivity to heat.
  • Can Cowboy Queso be made in the slow cooker? Yes! Just throw everything into the slow cooker and let it simmer for a few hours. This is a great way to keep it warm for parties.
  • Can Cowboy Queso be made on the stovetop? Yes! Brown the ground beef. Drain the fat. Add the remaining ingredients and cook on medium-low until melted.

What to Serve with Queso Dip

This cheese dip has been on repeat at our house. It has quickly become a game day staple! It is SO much better than regular Rotel dip. We like to serve this with Fritos. It is also great with tortilla chips and veggie slices. Leftovers are delicious over a baked potato, nachos, or some egg noodles. YUM!

Ingredients:

  • 1 lb lean ground beef
  • 1 Tbsp dried onion flakes
  • 1 (15-oz) can chili beans, undrained
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (10-oz) can Rotel tomatoes, undrained
  • 1 cup frozen corn , thawed
  • ½ cup milk
  • 1 Tbsp chili powder
  • ½ tsp oregano
  • ½ tsp hot sauce
  • ¼ tsp garlic powder
  • ¼ tsp cumin
  • 1 (16-oz) package Velveeta cheese , cubed

Instructions:

Microwave Directions

  • In a large skillet, cook ground beef until no longer pink. Drain fat.
  • Place beef in a large microwave safe bowl. Add remaining ingredients, stir. Microwave on HIGH for 4 minutes, stir. Microwave on HIGH for an additional 4 minutes, stir. Continue microwaving in 1 to 2 minute intervals until cheese is melted and dip is thoroughly heated. Serve immediately.

Slow Cooker Directions

  • In a large skillet, cook ground beef until no longer pink. Drain fat.
  • Place cooked beef in slow cooker. Add remaining ingredients and stir. Cook on LOW for 2 or 3 hours, until cheese is melted. Serve with chips.

Notes:

  • Can substitute ground turkey or sausage for the ground beef.
