Bacon Egg & Cheese Breakfast Sliders

We are officially obsessed with these Crack Breakfast Sliders. Hawaiian rolls stuffed with cheddar cheese, bacon, and scrambled eggs and brushed with ranch butter. OMG! SO good! These sandwiches are great for breakfast, brunch, lunch, and dinner. All you need are some cheesy grits or a salad and you are set! You must add this recipe to your menu ASAP! It is sure to be a hit!

What does CRACK mean?

If a recipe has “crack” in the title it means that the recipe has cheddar, bacon, and ranch in the ingredients. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck. 

According to the dictionary, the definition of crack is “of superior excellence or ability”. We think the flavor combination of cheddar, bacon, and ranch fits this definition! This recipe is most definitely of superior excellence!

How to Make Crack Breakfast Sliders

These breakfast sandwiches are super easy to make with only a few simple ingredients. In a large skillet, cook bacon slices over medium-high heat until crispy. Drain excess grease on paper towels. In a medium bowl, whisk together eggs and milk. Season with salt and black pepper. Scramble eggs in the skillet over medium heat and set aside. 

Using a serrated knife, split a package of Hawaiian rolls in half. Place the bottom buns in a baking dish. Sprinkle shredded cheddar cheese over the bottom of the rolls. Top with scrambled eggs. Add a layer of cooked bacon. Top bacon with the remaining cheese. Place top buns on top of the cheese.

In a small bowl, melt butter. Stir in ranch dressing mix. Brush or pour ranch butter over the tops of the rolls and bake in a preheated oven until the cheese is melted and the rolls are golden brown.

  • Can cook the bacon in a skillet or on a foil-lined baking pan at 400ºF for 20 to 25 minutes.
    • Feel free to substitute turkey bacon for lower calories.
  • I use Kings Hawaiian rolls. Can substitute a package of slider buns.
  • I use shredded cheese. You can use cheese slices if you prefer.

  • Can I make Breakfast Sliders ahead of time? Yes! Assemble the rolls, omitting the ranch butter. Cover the pan with aluminum foil or plastic wrap and refrigerate. When ready to bake, brush the roll with the ranch butter and bake as directed.
  • For softer rolls, cover the baking pan with aluminum foil while baking.
  • Store leftovers in an airtight container in the refrigerator.

What to Serve with Delicious Breakfast Sliders

This has quickly become one of our favorite breakfast recipes. We love the sweetness of the rolls with the savory bacon, cheddar, and ranch. These are equally delicious dipped in some maple syrup. YUM! We serve these breakfast sandwiches with cheese grits or roasted potatoes for breakfast. A green salad is our go-to lunch and dinner side dish. One bite and these sandwiches are sure to become a favorite at your house too.

  • Preheat oven to 350ºF. Spray a 9×13-inch baking dish with nonstick cooking spray.
  • In a large bowl, whisk together eggs, heavy cream, salt, and pepper.
  • Melt butter in a large skillet over medium heat. Add egg mixture and scramble. Set aside.
  • Cook bacon slices in the skillet over medium-high heat until crispy. Cut bacon slices into 4 pieces each. Set aside.
  • Without separating the rolls, cut the entire loaf horizontally and place the bottoms in a 9×13-inch baking dish.
  • Sprinkle 1 cup of cheese on the bottom of the rolls. Layer scrambled eggs, bacon slices, and top with remaining cheese. Place the top buns on top of the cheese.
  • In a small bowl, combine melted butter and ranch dressing mix. Brush ranch butter over the tops of the rolls.
  • Bake for 15 to 20 minutes, until the cheese has melted and the rolls are warm.

  5. I love slider recipes and wonder why I never thought to do breakfast. Here’s a tip: I cut the buns in half as you show and then I cut them apart into individual tops and bottoms. Now assemble the bottoms in the pan, sides touching (as if you never cut them apart, lol) assemble per recipe and top. It makes them so much easier to serve and the butter gets down into the cracks as a bonus.
