Chicken & Rice Casserole with Cheddar, Bacon, and Ranch

New favorite alert! This Crack Chicken Rice-a-Roni Casserole should come with a warning label. It is ridiculously good! Chicken, rice-a-roni, sour cream, cream of chicken, cheddar, bacon, ranch, and french fried onion. All of my favorites in one dish! We ate this for lunch and had the leftovers for dinner on the same day. We just couldn’t get enough of it! Give this a try the next time you need an easy weeknight meal that the whole family will enjoy.

How to Make Crack Chicken Rice-a-Roni

This casserole is super easy to make. Start with preparing a box of Chicken Rice-a-Roni according to the package directions. Combine cooked rice with sour cream, and cream of chicken soup. Stir in cooked bacon, cheddar cheese, ranch dressing mix, and cooked chicken. Spread the mixture into a baking dish. Top with french fried onions and bake.

  • I used rotisserie chicken for the cooked chicken in this casserole.

  • Preheat oven to 350º F. Spray a 9×13-inch baking dish with cooking spray.
  • Prepare Rice-A-Roni according to package directions. Add soup, sour cream, chicken, bacon, ranch, and cheddar cheese. Stir to combine.
  • Spread rice mixture into prepared pan. Top rice with fried onions.
  • Bake uncovered for 30 minutes.

  1. Took a chance and made this shortly after it was posted. I was afraid it would be too salty with all the boxed/prepared items, but it was okay. Easy to prep ahead on a busy day and bake when ready. Leftovers the next day were also a hit.

  2. Thank you so much for the recipe for ranch dressing mix. I recently found out I can’t have soy in my diet, everything has soy in it. Cooking from scratch is going to be the only way to avoid.

    My family loves all your recipes ! I bought 2 deep freezers for when my families visit. We have 14 grandchildren and they lick their plates when they finish eating your delicious recipes. I don’t know if you are a COSTCO fan, but I just wanted to mention to you, and your fans, that COSTCO now has hand pulled rotisserie chicken in vacumn sealed bags . The bags are available in the section of the store where they have ready made trays with shrimp and wraps etc. THIS MAKES YOUR RECIPES SO MUCH EASIER TO MAKE, BECAUSE YOU NO LONGER HAVE TO PULL APART A ROTISSERIE CHICKEN. THE WORK IS DONE FOR YOU. Thank you for all your creative casserole and other recipes. I don’t ever need to look at a Cook Book again. All I need now is to continue to print out your recipes.
