These Crack Keto Biscuits are AH-MAZ-ING! Even if you aren’t doing the Keto diet, you are going to LOVE this bread. Low-carb bread loaded with cheddar, bacon, and ranch – so good! I made these to go with a steak dinner last weekend and we gobbled them up! We had a couple of leftover biscuits. I warmed them up and ate them with some scrambled eggs for breakfast. Perfect!
How to Make Keto Biscuits with Almond Flour
These Crack Keto Biscuits are super easy to make. Start with melting some cream cheese and mozzarella cheese. I just popped it in the microwave for about a minute. Next stir in some baking powder, eggs, almond flour, ranch dressing mix, cheddar cheese, and bacon. Form the dough into balls and let rest 10 minutes before baking. So easy!
I used a 10-inch skillet and a large cookie scoop and got 11 biscuits. If you don’t want individual biscuits, I think you could just put the dough in the skillet or baking pan and make a loaf of bread. I like to brush the cooked biscuits with some melted butter and dried parsley.
The key to making these Crack Keto Biscuits is using superfine almond flour. Almond flour is pretty common in stores. I bought mine at Publix and Walmart. I used King Arthur Flour brand. I also like Bob’s Red Mill Almond Flour.
Can Crack Keto Biscuits Be Frozen?
I have not frozen these Crack Keto Biscuits, but I am sure they would be just fine frozen after you have baked them. To reheat after freezing, thaw and either reheat in the microwave or wrap in foil and reheat in the oven.

Crack Keto Biscuits
Ingredients:
- 4 -oz cream cheese
- 2 cups shredded mozzarella cheese
- 2 tsp baking powder
- 3 large eggs
- 1 (1-oz) package ranch dressing mix
- 1½ cups superfine almond flour
- 1 cup shredded cheddar cheese
- ½ cup chopped cooked bacon
Instructions:
- Preheat oven to 400ºF.
- In a microwave-safe bowl, microwave cream cheese, and mozzarella cheese on HIGH for 1 minute. Stir until smooth.
- Add baking powder, eggs, ranch mix, and almond flour to cream cheese mixture. Stir well.
- Stir in cheddar cheese and bacon. Stir until combined.
- Spray a 10-inch iron skillet with cooking spray. Divide the dough into 11 or 12 balls and place in skillet. Place skillet in the refrigerator for 10 minutes.
- Remove skillet from the refrigerator and bake for 20 to 25 minutes. Brush cooked biscuits with melted butter and sprinkle with dried parsley, if desired.
Notes:
- Can use a 9 or 10-inch cake pan if you don’t have a skillet.

- Do not make the ranch dressing. Use the mix dry.
- Can reduce the amount of Ranch dressing mix to your personal preference.

OMG! These are amazing! So simple to mix up and super yummy. baked these on a cookie sheet and they came out perfectly. This is a keeper recipe!
I topped with garlic butter and more cheddar about 5 min before they were done. This is as close as it gets to cheddar Bay biscuits from that lobster place guys! Yum o!
I didnt keep in thr fridge mong so mine was one big skillet bread… but it was okay no one minded that cus they were so yummy

This recipe is the best – hands down. Most mornings my wife and I slice them in half and add bacon, a fried egg and a little Tabasco or buffalo wing sauce between the top and bottom.
While nothing beats yeast bread, these will help fill the void. Made them this morning while it was still cool. Pulled them out of the oven and ran off to play tennis. Wishing I could have tasted them fresh from the oven. My oven did require more bake time. So I baked another minute then turned the heat off and let them finish another 5 minutes in hot oven. Difficult to mix so I got out my mixer, that did not go well until I changed to dough hooks. Then all went well. I wanted to post a pic but it doesn’t seem to work here for me.

I haven’t had bread in so long and I love biscuits. These were fabulous. My family has asked me to make them again soon.
I didn’t have ranch dressing mix so I subbed garlic, dill, & parsley for it. I think I put about 1/2 tsp of each. They were delicious!
To the person above who said they had problems getting the cream cheese to melt, I did too. I put it in the microwave for 30 seconds after the initial minute and it looked smooth when I finally stirred it but it was sort of rubbery. It was fine in the end though.
I made these tonight and this is my new go to biscuit. They looked like the picture and taste great
