Keto Bacon Bites with Cheddar and Ranch

These Crack Keto Bites have been on repeat at our house. Crispy bacon, cheddar, cream cheese, ranch dressing mix, egg, almond flour, and baking powder. SO good! I made these during the holidays and they flew off the plate. I could have eaten the whole batch myself! They taste AH-MAZ-ING!

Even if you aren’t doing a low-carb or keto diet, you are going to love these bacon puffs! They are effortless to make and ready to eat in under 20 minutes! You can’t beat that! These are great for breakfast, parties, or a delicious low-carb snack. You must give this recipe a try ASAP!

What does CRACK mean?

If a recipe has “crack” in the title it means that the recipe has cheddar, bacon, and ranch in the ingredients. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck. 

According to the dictionary, the definition of crack is “of superior excellence or ability”. We think the flavor combination of cheddar, bacon, and ranch fits this definition! This recipe is most definitely of superior excellence!

How to Make Crack Keto Bites

These puffs are super easy to make with only a few simple ingredients. Start with cooking bacon in a skillet until crispy over medium-high heat. Remove from skillet and drain bacon grease on paper towels. Chop bacon slices into small pieces. In a microwave-safe large bowl, melt sharp cheddar cheese and cream cheese in the microwave for 30 to 45 seconds. Stir until smooth. Mix in almond flour, an egg, ranch seasoning, and baking powder. Stir in the cooked bacon and more cheddar cheese. Use a small cookie scoop and scoop the mixture into balls. Place on a baking sheet and bake until golden brown.

  • I used Bob’s Red Mill Almond Flour. You can find it at Walmart, your grocery store, and Amazon.
  • You can also substitute turkey bacon for a lower-calorie option.
    • Can use regular or uncured bacon.
  • To cut down on prep time, use precooked bacon.

  • You can serve the bacon bites hot out of the oven or cooled to room temperature. Leftovers are even delicious cold!
  • Are Crack Keto Bites gluten-free? Yes! All of the ingredients in the recipe are gluten-free.
  • I garnish the cooked balls with some dried parsley, just for color.
  • Store leftovers in an airtight container in the refrigerator.

What to Serve with Keto Bacon Puffs

These bacon puffs are dangerously delicious. We love them for breakfast with eggs, and muffins. Try them dipped in some sugar-free maple syrup – YUM! They are equally delicious at lunch or dinner a side dish to a bowl of soup or a salad.

We eat the balls plain. If you like to serve them with a dipping sauce, I suggest some Homemade Ranch Dressing, sugar-free BBQ sauce, or Raising Cane’s Sauce.

  • Preheat oven to 400ºF. Line a cookie sheet with parchment paper and set it aside.
  • In a non-stick skillet over medium-high heat, cook bacon until crispy. Drain on paper towels. Chop into small pieces.
  • In a microwave-safe bowl, combine ¼ cup cheddar cheese and cream cheese. Cook in the microwave for 30 to 45 seconds, until melted. Stir until smooth.
  • Stir in egg, almond flour, baking powder, and ranch dressing mix. Mix in cooked bacon pieces and the remaining ¾ cup shredded cheese.
  • Use a small cookie scoop to scoop the dough and roll it into balls. Place on prepared baking sheet.
  • Bake for 10 to 12 minutes, until golden brown.

  1. These turned out great, so addicting. Just like Red Lobster rolls but with bacon. I ended up scooping them bigger so I only made 15 of them with the batch. By my calculations at that size they are 150 calories and 1 net carbs each.

  2. Probably a stupid question. In step 3 you melt cheese and cream cheese. Step 4 you make the dough. Step 5 is scooping the dough on to the pan. At what point do you use the cheese from Step 3? Was it supposed to be added in Step 4? Do you roll the dough in the cheese made in Step 3? There’s nothing said about it after melting it in the microwave.
