Easy Breakfast Casserole with Frozen Biscuits

This Cracked Out Biscuit Breakfast Casserole has quickly become a family favorite! It is effortless to make and tastes great! Frozen buttermilk biscuits, bacon, eggs, ranch dressing mix, milk, and heavy cream. I mean, how could this not be good?  Even though this is a breakfast casserole, it is great for lunch and dinner as well. We love breakfast for dinner at our house. Run, don’t walk, to get the ingredients to make this casserole!

How to Make Cracked Out Biscuit Breakfast Casserole

This casserole is very easy to make with only a few simple ingredients. In a large skillet, cook bacon until crispy over medium heat. Drain bacon on paper towels and chop. Set aside. Slice partially thawed frozen biscuits in half making two circles. Place biscuit bottoms in a baking dish.  Sprinkle the biscuits with some cooked bacon and shredded cheddar cheese. Place remaining biscuits on top of the cheese. Sprinkle with more bacon and cheese. In a large bowl, stir together milk, heavy whipping cream, and ranch dressing mix. Season with salt and black pepper if desired. Pour egg mixture over biscuits. Bake until the eggs are set.

  • The biscuits only need to be thawed enough to be able to slice them in half. You can pop them in the microwave for a few seconds if you are short on time.

This is a very filling casserole. You don’t need a lot of side dishes to go with it. We usually make some grits or fruit. It is equally delicious with some hash browns or a cheesy potato casserole. and This is a great casserole for weekly meal prep, overnight guests, and holiday mornings.

Ingredients:

Instructions:

  • Preheat oven to 375°F.  Lightly spray a 7×11-inch dish with cooking spray.
  • Cook bacon in large skillet over medium heat. Drain on paper towels and chop.
  • Slice each biscuit in half with a serrated knife. (You will have 2 round pieces) Place biscuit bottoms in the baking dish.  Sprinkle half of the cooked bacon over the biscuits and top with half of the cheese.  Place remaining biscuits on top of the cheese and cover with remaining bacon and cheese.
  • Whisk together eggs, milk, cream, and ranch dressing mix in a large measuring cup. Pour egg mixture over biscuits.  (Can cover and refrigerate at this point)
  • Bake for 50 to 60 minutes, until eggs are set. Cover the casserole dish with aluminum foil if it starts to get too brown.
  • Let casserole stand 10 minutes before serving.
