I was looking for something a little different for lunch the other day and decided to “crack out” our favorite chicken salad recipe and bake it. OMG! SOOOO good. We loved the addition of the cheddar, bacon, and ranch.
This chicken salad casserole is very easy to make. Simply mix together cooked chicken, ranch dressing mix, lemon juice, Worcestershire sauce, celery, mayonnaise, bacon, and cheddar cheese. Spread the mixture into a baking dish, top with crushed potato chips, and bake.
You can make the chicken salad mixture ahead of time and refrigerate it until you are ready to bake the dish. You may need to add a few minutes to the cooking time if you are baking it straight from the refrigerator.
This “Cracked Out” Hot Chicken Salad was a fantastic change to our usual chicken salad sandwiches. It was so delicious baked and topped with potato chips! Cracked Out Hot Chicken Salad
Ingredients:
- 2½ cups cooked chopped chicken
- 1 Tbsp dry ranch dressing mix
- 2 tsp lemon juice
- 1 tsp Worcestershire sauce
- ½ tsp salt
- ¼ tsp onion powder
- 1 cup chopped celery
- 1 cup mayonnaise
- 3 Tbsp cooked bacon
- ½ cup shredded cheddar cheese
- 1 cup crushed potato chips
Instructions:
- Preheat oven to 350 degrees. Lightly spray a 8×8-inch pan with cooking spray.
- Combine chicken, ranch mix, lemon juice, Worcestershire, salt, onion powder, celery, mayonnaise, bacon and cheddar cheese. Spread into prepared pan. Sprinkle with crushed potato chips.
- Bake uncovered for 25 minutes.

Curious why it’s called ‘hot’ chicken salad? I see nothing in the ingredients that would add heat to it, such as spices. ??
because it is served hot and not cold since it is baked in the oven ????
Can you freeze this? Would you cook it first and then thaw and reheat?
No need to bake first, just freeze and bake when you’re ready.

Going with a oriental dish, I would use soy sauce and use chowmein crispy noodles as a topper.

what do you mean with ranch mix? Living in The Netherlands, this sounds unfamiliar for me.
The most common ranch mix hear in that states is Hidden Valley Ranch mix. It is a dry packet mix, but you can use any brand, but I am not sure you have it in the Netherlands.
thanks, but no, we have no dry packet mix like ranch mix. is it more like herbs, more like garlic, or more like italian seasoning? Because those 3 dry salad mixes we do have 😉
