How to Make Creole Cornbread
This recipe is super easy to make with only a few simple ingredients. Pour vegetable oil into a cast iron skillet. Place skillet in a cold oven and preheat to 350ºF. In a large skillet, cook smoked sausage over medium heat until it starts to brown. Remove sausage from the skillet and drain excess grease. In a large bowl, whisk together eggs, milk, and canola oil. Stir in yellow cornmeal, salt, and baking soda. Add shredded cheddar cheese, cajun/creole seasoning, creamed corn, onion, jalapeno peppers, cooked rice, and cooked sausage to the bowl. Stir to combine. Pour batter into the hot cast iron skillet. Bake in a preheated oven until golden brown.

Ingredients:
- ¾ lb smoked sausage, diced
- 2 large eggs
- 1 cup milk
- 5 Tbsp canola oil, divided
- 1 cup yellow cornmeal
- 1 tsp salt
- 1/2 tsp baking soda
- 2 tsp cajun seasoning
- 2 cups cooked rice
- 2 Tbsp dried minced onion
- 1 (4-oz) can chopped jalapeno peppers
- 1 (14.75-oz) can cream-style corn
- 3 cups shredded cheddar cheese
Instructions:
- Pour 1 tablespoon of vegetable oil into a cast iron skillet. Place skillet in a cold oven and preheat to 350ºF.
