Crunchy Cajun Chicken Fingers

- 2 boneless, skinless chicken breasts
- 3 Tbsp flour
- 3 Tbsp creole/cajun seasoning
- 2 egg whites
- 2 cups crushed baked potato chips
- cooking spray
Preheat oven to 400°.
Cut each chicken breast into three strips. Combine flour and creole seasoning in a shallow dish, stirring with a whisk. Place egg whites in a shallow dish. Place potato chips in a shallow dish. Working with 1 chicken strip at a time, dredge in flour mixture. Dip in egg whites; dredge in potato chips. Place on a baking sheet coated with cooking spray. Repeat procedure with remaining chicken strips, flour mixture, egg whites, and potato chips.
Lightly coat chicken strips with cooking spray. Bake at 400° for 12-15 minutes, turning once during baking.
I bet these are really a kid pleaser. I love chicken fingers. Cajun spice really kicks it up a notch.
I have this seasoning- i'll give this a try.
