Dijon Balsamic Grilled Chicken

Dijon Balsamic Grilled Chicken - chicken marinated in dijon mustard, balsamic, lemon, garlic, rosemary and olive oil - can whisk together  and  refrigerate overnight for a quick dinner. This chicken is full of amazing flavor! We made it two days in a row!

This is another Tasty Kitchen find.  It was so good that we had it twice in one week. You can taste the dijon mustard, so if you aren’t a fan, you might want to cut the mustard in half.  This marinade was very simple to make.  I had everything in the pantry to make it – no special trip to the grocery store required!  The recipe below makes enough for 10-12 chicken breasts.  We used this marinade on chicken, but we will be trying it on a pork tenderloin next time.

Dijon Balsamic Grilled Chicken

  • ¼ cup dijon mustard
  • ¼ cup balsamic vinegar
  • ¼ cup lemon juice
  • 6 cloves garlic, minced
  • 2 tsp dried rosemary
  • ½ tsp salt
  • 1 tsp pepper
  • ½ cup olive oil
  • 8 chicken boneless chicken breasts

Mix ingredients together. Pour over chicken (or pork) and allow to marinate in the refrigerator 2 hours or longer. Grill.

  2. I've used a mix very similar to this for lamb and pork- It has the same ingredients, but has soy sauce instead of the balsamic vinegar, and adds a Tablespoon of freshly grated ginger. It's great! Im sure this would be, as well.
