I served these potatoes with our Honey Lime Chicken.  I am not a huge potato fan, but I really liked these.   I like my potatoes crispy, so I made sure to slice them really thin.  This was a really simple side dish and I am already planning on making it again.  There are so many flavors that could be used on these potatoes.  I think I might so southwestern next time.  Maybe even add some BBQ and bacon on top of them!

Easy Oven Roasted Potatoes

prep time: 5 MINScook time: 15 MINStotal time: 20 mins

ingredients:

  • 2 large potatoes, scrubbed
  • 3 Tbsp olive oil
  • 1 Tbsp Italian Seasoning
  • 1 tsp salt
  • 4 Tbsp Parmesan cheese

instructions:

  1. Preheat oven to 450ºF. Line a rimmed baking sheet with foil.
  2. Slice potatoes into very thin slices (1/4 inch). Put potato slices in a gallon ziplock bag.
  3. Pour olive oil, Italian seasoning and salt in ziplock bag and toss to coat potatoes.  
  4. Place potatoes in a single layer on prepared baking sheet.
  5. Bake  for 15 -20 minutes, until lightly brown.  Top with Parmesan cheese and bake an additional 5 minutes.

  3. Great recipe! I made this for dinner along with some baked chicken breasts, so I ended up baking the potatoes for 30 minutes on 425. Next time I make this recipe, I'll grease the pan with a little more olive oil; some of the potatoes stuck to the pan.
