Easy Tomato Salad Recipe with Ranch

We are smack dab in the middle of tomato season. This easy Tomato Salad is a staple in our house this time of year. I make this at least once a week. It is ridiculously easy and tastes great! We love this at cookouts or with a sandwich for lunch during the week. Heck, we’ve been known to just eat a big helping of this tomato salad as our meal!

How to Make Easy Tomato Salad with Cucumber

As the name indicates, this salad is super easy to make. Simply chop up some beefsteak tomatoes, cucumbers, red onion, and hard-boiled egg whites. Toss with some Ranch dressing, dill weed, salt, and pepper. That is it! SO easy!

I only used the whites of the hard-boiled eggs in this salad. Feel free to chop up the whole hard-boiled egg and toss it into the salad. I used my favorite Instant Pot Hard-Boiled Eggs method to cook the eggs. I always make extra hard-boiled eggs for Chicken Legs to snack on during the week.

Can I Make this Ahead of Time?

Absolutely! I like to make this at least an hour before serving and let it hang out in the refrigerator. This gives the salad flavors time to blend together and become extra yummy. This salad will keep for several days in the refrigerator. Just make sure to store it in an air-tight container or covered tightly with plastic wrap. Give the salad a good stir before serving.

Tomatoes, cucumber, red onion, hard-boiled egg whites, Ranch dressing, fresh dill, salt, and pepper. Can make in advance and refrigerate until ready to serve. #tomato #salad #sidedish #potluck

Ingredients:

  • 4 to 6 ripe beefsteak tomatoes
  • 1 cucumber, peeled and cubed
  • ½ red onion, sliced into rings
  • 4 hard-boiled eggs, whites only, chopped
  • ½ cup bottled ranch dressing
  • 2 tsp chopped fresh dill
  • ½ tsp pepper, or to taste
  • salt, to taste

Instructions:

  • Cut tomatoes into 8 to 10 chunks per tomato. Place in a large bowl.
  • Add remaining ingredients and toss to coat.
  • Add remaining ingredients to bowl. Toss to coat.
  • Cover and refrigerate 1 hour before serving.

Notes:

May use more or less Ranch dressing in the salad.
Can use whole hard-boiled egg (whites and yolks) if desired.
Can add crispy cooked bacon to salad, if desired.
