Overnight Breakfast Casserole

This Everything Bagel Breakfast Casserole is a new favorite at our house. Bagels, sausage, cream cheese, eggs, sour cream, and cheese. All of our favorites in one pan! YUM! This casserole is effortless to make and is loaded with tons of great flavor. It is perfect for breakfast, brunch, lunch, and dinner.

What is Everything Bagel Seasoning?

Everything Bagel Seasoning is all the rage. I discovered it last year when Trader Joe’s released their jar of Everything But The Bagel Seasoning blend. It is a very simple seasoning combination of poppy seeds, white sesame seeds, black sesame seeds, garlic, onion, and sea salt flakes. It goes great with just about everything, especially bagels!

How to Make Bagel Breakfast Casserole

This casserole is very simple to make with only a few simple ingredients. You just need to plan ahead so the casserole can sit in the refrigerator overnight. You are going to start with a package of Everything Bagels. Chop the bagels into 1-inch pieces and spread them in the bottom of a 9 x 13-inch baking dish that has been sprayed with nonstick cooking spray.

Next, cook the sausage in a large skillet over medium-high heat until it is no longer pink. Drain excess grease. Add cream cheese to the cooked sausage and stir to combine. Sprinkle the sausage and cream cheese mixture over the bagels.

In a large bowl, whisk the eggs, heavy cream, and sour cream. Season with kosher salt and black pepper. Pour egg mixture over bagel pieces. Sprinkle shredded cheese over the casserole. Cover the and pop in the fridge overnight.

When ready to bake, remove the baking dish from the refrigerator and bring it to room temperature. Preheat the oven and bake uncovered until the eggs are set. Garnish with fresh parsley.

Helpful Tips & Frequently Asked Questions

  • I use Jimmy Dean breakfast sausage. Can substitute turkey bacon for lower calories.
  • If you can’t find Everything Bagels, you can use plain bagels and a few teaspoons or a tablespoon of store-bought everything bagel seasoning.
  • Can I Make Breakfast Casserole in Advance? Yes! You need to make the casserole at least 8 hours in advance, but you can make it up to 24 hours in advance and it will be just fine.
  • Can I Freeze Bagel Breakfast Casserole? Sure! Assemble the casserole as directed and pop it in the freezer instead of refrigerating it.
    • To bake the casserole after freezing, thaw completely and then bake as directed below. You can also freeze the baked casserole.
    • To reheat the baked casserole, thaw completely and bake covered at 350ºF until warmed.
  • What can I add to the casserole?
    • green onions
    • bell peppers
    • cayenne pepper
    • mushrooms
    • a can of drained Rotel tomatoes and diced green chiles

  1. This came out great! I had a bunch of leftover bagels from a thing at work and I didn’t want to throw them away. I did not let the casserole sit overnight, but it still came out terrific! Next time I will put the cheese on the top about halfway through baking because it got a bit too browned. I will definitely make this again!

  2. Seriously, ridiculously easy and delicious! Great for family gatherings and potlucks. This has gone into our "favorite recipes" binder.
