This is the second recipe I’ve made from the new Fat Witch Bakery Cookbook. Everyone loved the original brownies, so I felt it was safe to continue my adventure through the cookbook. I chose the peanut butter bars as my next treat. I love peanut butter and chocolate, so I considered it a “must try”.
The bars were easy to make. The batter is much thicker than the brownies, but they bake up in less than 30 minutes. I (reluctantly) let them cool and then dug in. They were great. They were like a big peanut butter cookie – crispy on the outside, but nice and soft on the inside. They keep well, so we were able to snack on these all weekend long.
Fat Witch Peanut Butter Bars

- 2 large eggs
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup crunchy peanut butter
- 1 tsp pure vanilla extract
- 2 Tbsp unsalted butter, softened to room temperature
- 1 ¼ cups unbleached flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup semisweet chocolate chips
Grease and flour a 9×9 baking pan. Preheat oven to 350 degrees.
Beat the eggs and both sugars until smooth. Add the peanut butter and continue mixing until well combined. Beat in the vanilla and butter and mix until thouroughly incorporated.
Measure the flour, baking powder and salt and sift directly into the batter. Mix gently until well combined and no trace of the dry ingredients remains. Using a wooden spoon, stir in the chocolate chips. Spread the dough into the 9×9 pan with a spatula. Bake for 25 minutes or until toothpick inserted into the center comes out clean or with only crumbs, not batter, on it. Allow to cool for 1 hour before cutting.
Hopefully the name of the book and bakery are NOT indicative of how one will gain wait eating everything in the book, ha ha.

Looks good! Will really have to check out this book. There are a few good reviews at amazon with one exception. One reviewer claims that the few recipes that he tries are all cakey instead of dense, as a brownie should be! Interesting review! I'm going to give one of these a try before getting the book.
