I’ve got a delicious Green Bean & Artichoke Casserole – fresh green beans, artichoke hearts, bread crumbs, parmesan cheese, and french fried onions. This is not your Grandmother’s green bean casserole! There isn’t a can of cream of mushroom soup insight.
How to Make Green Bean & Artichoke Casserole
This Green Bean & Artichoke Casserole is simple to make. Start with sauteing an onion in some olive oil. Add some fresh cut green beans and garlic and cook for a couple of minutes. Stir in some chopped artichoke hearts, Italian bread crumbs, Italian seasoning, parmesan cheese, heavy cream, and a dash of cayenne. Transfer mixture to a 9×13-inch baking dish and top with french fried onions. Pop it in the oven and you are done!
Can Green Bean Casserole Be Made in Advance?
You can make this casserole in advance and refrigerated overnight. You can even freeze the casserole for later. I usually freeze this casserole after baking and just reheat it covered in the oven.

Green Bean & Artichoke Casserole
Ingredients:
- 1 medium onion, chopped
- 1 Tbsp olive oil
- ½ tsp minced garlic
- 1½ lb fresh green beans, cut into 1-inch pieces
- ½ cup Italian seasoned bread crumbs
- 3 (14-oz) cans artichoke hearts, drained and chopped
- 1 cup grated parmesan
- dash cayenne pepper
- ½ tsp Italian seasoning
- ⅓ cup heavy cream
- salt and pepper to taste
- 1 (2.8-oz) can french fried onions
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- In a skillet over medium-high heat, heat olive oil. Add onion and cook until tender. Add garlic and cook 1 minute longer. Add fresh green beans and cook an additional 3 minutes.
- Remove skillet from heat, add bread crumbs, artichoke hearts, parmesan cheese, cayenne, Italian seasoning, heavy cream, salt, and pepper.
- Transfer mixture to prepared pan. Top casserole with french fried onions.
- Bake for 25 to 30 minutes.

any way to make this a lighter version for those dieters?
Superb combination of flavors! I like mine extra creamy, so added more heavy whipping cream. I used a large glass jar of artichokes in oil from Costco that had about 3/4 left and it worked great. Family loved it and I’m excited to have more recipes with artichokes! THANK YOU! I’ll be trying this out on additional family over the holidays. 😋
