When I saw this recipe in the January edition of Cooking Light I knew we had to make it.  Since it is finally grilling weather, we gave it a try.  We LOVED it!

This chicken is super easy to make. Whisk together hot sauce, melted butter, Worcestershire sauce, and onion powder. Let the chicken hang out for a bit and then throw it on the grill. Don’t have a grill? No problem! You can make the chicken inside. Pan sear the chicken for 3 to 4 minutes on both sides. Place chicken on a rimmed baking sheet. Bake at 400ºF for 10 minutes, until internal temperature reaches 165ºF.

This chicken wasn’t as spicy as I thought it would be.  It was actually pretty mild for us.  Next time I will pour some of the reserved buffalo sauce over the chicken after we take it off the grill.  I also want to try this as a sandwich and top it with lettuce, tomato, bleu cheese or ranch dressing and pepper jack cheese.   That sounds like the perfect Sunday lunch.

We served this chicken with some corn and butter peas. Here are a few of our favorite recipes from the blog that go great with this Grilled Buffalo Chicken:

Ingredients:

  • ¾ cup hot sauce
  • ¼ cup butter, melted
  • 2 tsp Worcestershire sauce
  • ½ tsp onion powder
  • 4 (6-oz) skinless, boneless chicken breast halves
  • Cooking spray
  • ¼ tsp salt
  • Light ranch dressing, optional

Instructions:

  • Combine hot sauce, melted butter, Worcestershire sauce, and onion powder in a bowl. Reserve 1/4 cup hot sauce mixture; pour remaining hot sauce mixture in a zip-top plastic bag. Add chicken breast halves to bag; seal. Marinate at room temperature 20 minutes (don’t refrigerate it – the butter will harden).
  • Remove chicken from bag; discard marinade in bag. Sprinkle chicken with salt. Grill chicken until done. Brush reserved marinade over chicken. Serve with light ranch dressing, if desired.

Notes:

To cook chicken without a grill, pan sear chicken for 3 to 4 minutes on both sides. Place chicken on a rimmed baking sheet. Bake at 400ºF for 10 minutes, until internal temperature reaches 165ºF.
Can use marinade on any cut of chicken – breasts, thighs, tenders, legs.
Can use bone-in or boneless chicken – adjust the cooking time and cook until internal the temperature reaches 165ºF.
I use Crystals or Frank’s hot sauce.

  1. Just FYI. Don’t do this on an indoor grill. Not unless you want to breath in a home made Frank’s red hot gas bomb. That was a fun cooking experience! Ahha
