Will keep in the refrigerator for several days. I made this for a cookout and it was gone in a flash!! NO mayonnaise and gluten-free. YUM!

This Grilled Corn Salad is a summertime favorite! Freshgrilled corn, sweet peppers, jalapeños, feta tossed in a sweet and spicy lime vinaigrette. SO light and delicious. PERFECT for all your summer cookouts! Just toss the corn on the grill with the meat and this side dish comes together in no time!
How to Make Grilled Corn Salad
This recipe is very easy to make. Remove the husk and silk from some fresh corn. Spray the corn with cooking spray and cook on the grill for about 15 minutes. Transfer the corn to a cutting board, cool slightly, and cut kernels off of the cob. Whisk together lime zest, lime juice, olive oil, garlic, honey, and cumin. Season with salt and pepper. Toss together corn, sweet peppers, jalapeños, feta, cilantro, and vinaigrette.
- I used feta cheese in this salad. If you don’t like feta, you can swap it out for some goat cheese or Cotija cheese.
- There is also a little fresh cilantro in this salad. If you aren’t a cilantro fan, you can definitely leave it out.
What to Serve with Grilled Corn
We served this corn with some grilled chicken. It is also great with pork and beef! You can store any leftovers in the refrigerator. It will keep several days. We LOVED the flavors in this easy side dish. A little sweet and a little spicy. Perfect!

Grilled Corn Salad
Equipment:
Ingredients:
- 6 ears of corn, husks and silk removed
- 2 tsp lime zest
- ¼ cup fresh lime juice
- ¼ cup olive oil
- 1 Tbsp minced garlic
- 1 Tbsp honey
- ¼ tsp cumin
- 1½ cups sliced mini sweet peppers
- ½ cup sliced jalapeños
- ½ cup crumbled feta
- ¼ cup chopped fresh cilantro, optional
- salt and pepper to taste
- cooking spray
Instructions:
- Spray corn with cooking spray. Place on grill and cook until charred on all sides, 10 to 15 minutes. Transfer to cutting board, cool slightly, and cut kernels off of cob (corn cob kernel remover).
- Whisk together lime zest, lime juice, olive oil, garlic, honey and cumin. Season with salt and pepper.
- Toss together corn, sweet peppers, jalapeños, feta, cilantro and vinaigrette.
