Ham and Cheese Hash Brown Casserole is a new favorite in our house. I made this for lunch. Chicken Legs took one bite and said “Hey! This is really good!”. He could not stop eating this! I can see why, it is crazy good! Hash browns, ham, parmesan cheese, cheddar cheese, cream of potato soup, and sour cream. YUM!

This casserole is different from our usual potato casseroles because it uses Cream of Potato soup instead of Cream of Chicken soup. It made the casserole super creamy and delicious! I used freshly grated parmesan cheese, but you can certainly use the canned grated cheese if that is what you have in the fridge.

This casserole can be made ahead of time and refrigerated or frozen for later. This is great for breakfast, lunch or dinner. You can omit the ham if you want to serve this as a side dish. I like to split the casserole into two foil pans and bake one now and freeze one for later.

This casserole is great for breakfast, lunch, or dinner. We serve this with some green beans or broccoli and some biscuits. Here are a few of our favorite recipes from the blog that go great with this easy casserole:

Beef Enchilada Bubble Up – this cheesy Mexican biscuit casserole is a family favorite! Only 6 ingredients and ready in…

  1. I’ve made this probably a dozen times now. I usually use potatoes O’Brien and instead of 2 cans of cream of potato I typically use one and a cream of celery. I have also used a cream of onion or a cheddar cheese soup and it’s delish no matter what! Definitely a keeper. So easy to put together and my family loves it. Thank you!

  2. This is so good. I made the recipe exactly as written, and it is delicious!! This is the second time that I have made this casserole, and will be making it on a regular basis. Thank you

  3. Have made this amazing casserole three times this week. Fixing to put it in the oven to share with our Sunday School class this morning.

  4. Holy wow this was delicious!

I used a cheese blend from the store instead of just cheddar, and I’m solo so did half batch, But will DEFINITELY be making again.

Very rich and savory. Loved it!

  5. Made this today and love it! Didnt have a full cup of sour cream but used greek yogurt to fill in the remainder of the 2 cups and it still tastes great!

  6. I used Potato O”Brien hash browns…added an extra flavor with the onions and peppers.

  7. Made this last night, never seen my daughter go for seconds and ask if any leftovers this morning! Will make this again and again! Finally a recipe everyone likes! Thank you!

    1. What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

  8. could you make this easier for me , 4 and 5 people , how much of each ingredient ? 1/2 cup , 1 cup ect , not 0.5 or 0.4 ………….thx

      1. I thaw them in the frig. Makes it easier to stir up and still same amount of baking time. I do for an hour or a little more depending on how brown I want it.

  9. I made this for the first time last night. I wasn’t to totally sure about it. My family and I are not to keen in frozen potato products. But OMG! It was delicious. There was nothing left and we always seem to have leftovers. Thank you so very much for sharing this recipe. I will definitely be cooking this again.

  10. This is a great way to put leftover ham to use! I made this last night and find it to be a substantial meal. I’m not such a huge lover of cheese, though – and especially with the sour cream, the dish comes out very rich. I wonder what it would be like to cut back on the cheese some. Might try that the next time.

  11. I added eggs and took a shot… it turned out amazing!! I had to add an additional 20-25 more minutes for the eggs to get done but my husband and I both loved it.
I mixed up 8 eggs in a bowl then added it on top of the hash brown casserole and since it was already quite full in the casserole dish, I moved some of it around and let some of the eggs go down into the places where I moved the casserole. I then, flattened it back out and baked it as you directed and was very pleased. Very good recipe and instead of using cream of potato, I realized last minute I didn’t have everything I needed so I substituted cream of potato with a can of the same size of cream of mushroom and cream of chicken and I used cheddar and mozzarella. I was out of the parmesan.

  12. Can you add eggs?
I tried to look at the other comments, but they wouldn’t pop up. Thank you for sharing this recipe!

  13. I made this casserole as written before and loved it. I made it again with a few changes. I fried my Hash Browns because I think they have more flavor that way. I also used 1 Cup Sour Cream and 1 Cup of French Onion Dip. Delicious!

  14. Added diced peppers and onions to mine and split the cheese between cheddar and pepper jack-delicious! Thanks for sharing your recipe!

    1. Same temperature and you will just have to play with the cooking time. I always thaw the casserole before baking.

  15. I made it tonight. I used left over Christmas ham I had in the freezer. The casserole was good, would have been better if my ham hadn't been so sweet.

  16. I would like to bring this dish to a family breakfast, would it be okay to bake the dish for 30 min. at my house and then finish the remaining 30 min. at their house?

  17. I just made 1/4 of this recipe for myself in the airfryer. I don’t care for canned soups, so I just made an equivalent amount of white sauce from 1 tablespoon of butter, 1 tablespoon of flour, and half a cup of milk with some salt pepper at it. It only took 25 minutes at 350° in the air fryer. Delicious!

  18. I made this for an office breakfast potluck and it was a huge hit! The casserole had such wonderful flavor. I added green chile because being from New Mexico, we add green chile to everything. The chile gave it another depth of flavor and a little kick.

  20. This sounds like the perfect Christmas breakfast casserole. Have you, or could you add eggs to the casserole to make a complete breakfast meal with this? That would make it really simple.

  21. I made this the other night and it was DELICIOUS!! The only thing I did differently (by accident) was add the parmesan cheese in with everything else and it was amazing!! This tastes like the Cracker Barrel Hashbrown Casserole, but better 🙂 Wonderful recipe that's easy and the make-ahead option is such a plus!!

  22. I made this the other night and it was DELICIOUS!! Reminded me of Cracker Barrel's Hashbrown Casserole, but better! The only thing I did differently (by accident) was mix in the parmesan cheese with everything else and it was amazing! I honestly think I will do that again the next time I make it 🙂 Great recipe and leftovers are just as delicious!!

  23. Should be fine. I make lots of potato casseroles ahead of time and bake the next day. Enjoy!

  24. Planning on preparing this the night before and popping in the oven for brunch.
    Any experience with this approach?
