I am not a big morning breakfast person, but I love a good breakfast casserole for lunch or dinner. This Ham & Potato Breakfast Casserole is a favorite at our house. Ham, creamy potatoes, cheese, and eggs. YUM! All you need is some fruit and biscuits and you are set! This casserole is super easy to make and tastes great! SO creamy and packed full of amazing flavor!
How to Make Ham & Potato Breakfast Casserole
As I said, this casserole is super easy to make. Start with some diced ham. I like to throw it in the skillet to remove any excess moisture before adding it to the casserole dish. Ham has a ton of extra moisture and can make your casserole runny if you don’t get the excess water out. Once the ham is cooked, combine it with some chunky potato soup and place in a casserole dish. Top with shredded cheddar cheese. Whisk together eggs, milk, and pepper. Pour the egg mixture over the ham and cheese and bake. SO easy!
Can Ham & Potato Breakfast Casserole be Made in Advance and Frozen?
You can assemble the casserole ahead of time and refrigerate or freeze for later. If baking after freezing, thaw completely in the refrigerator and bake as directed below. If reheating after freezing, thaw and reheat in the microwave or covered in the oven. I suggest 350ºF for 30 to 40 minutes in the oven.

Ham & Potato Breakfast Casserole
Equipment:
Ingredients:
- 2 lb diced ham
- 2 (10.5-oz) cans cream of potato soup
- 8 large eggs
- 1 cup milk
- salt and pepper, to taste
- 1½ cups shredded cheddar cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- In a skillet over medium-high heat, cook ham until all the moisture is gone, about 5 minutes.
- Combine ham and undiluted cream of potato soup. Spread in the bottom of the prepared pan.
- Whisk together eggs, milk, salt, and pepper. Pour over ham mixture. Top casserole with shredded cheese.
- Bake uncovered for 50 to 55 minutes.
Notes:
Can use any cheese you prefer in place of cheddar.

I never would have thought to use cream of potato soup. When I saw the email, I figured it was just another shredded potato type casserole (which I love but already have many recipes). I'm glad I delved in further. Pinning for later. We love breakfast for dinner at our house and this fits the bill. Thanks for offering something a little different.
