These Honey Bacon Walnut and Brie Bites were inspired by my trip to Amsterdam. We ate in a cute sandwich shop one day and this was one of the sandwiches that we ordered. I couldn’t get enough of the flavor combination! Creamy brie, smoky bacon, sweet honey, and crunchy walnuts baked in crispy phyllo tart shells. It’s a delicate balance of sweet and salty, creamy and crunchy in every bite. This is my go-to recipe for parties and game day tailgates. I always double (or triple) the recipe. These things fly off the plate!

How to Make Brie Bites

This recipe is effortless to make with only a few simple ingredients. Remove the rind from a wheel of brie cheese. Cut the cheese into 30 bite-size pieces. Place one piece of cheese in each phyllo tart. Top each piece of cheese with some walnuts, chopped bacon, and a drizzle of honey. Place tarts on a baking sheet lined with parchment paper. Bake bake in a preheated oven until the cheese is melty. Garnish with fresh thyme or fresh rosemary and a sprinkle of sea salt, if desired.

    • There is no need to bake the tarts before assembling. The dough comes fully cooked.

Ingredients:

  • 8- oz brie cheese rind removed
  • cup chopped walnuts
  • 2 Tbsp honey
  • ½ cup cooked chopped bacon
  • 2 (15-count) mini phyllo tarts

Instructions:

  • Preheat oven to 350ºF. Place phyllo tarts on a baking sheet.
  • Cut brie into 30 pieces. Place one piece of brie in each phyllo tart.
  • Top each piece of cheese with some walnuts, honey and bacon.
