Cheesy Turkey Bacon & Tomato Bites

These Hot Brown Wontons have been on repeat at our house. Crispy wontons filled with a creamy cheese sauce, roasted turkey, crispy bacon, and juicy tomatoes. This has quickly become one of our family’s favorite recipes. They are effortless to make and taste great! We love to make these turkey bites for lunch, dinner, and parties!

What is a Hot Brown?

A Hot Brown sandwich is an open-faced turkey sandwich topped with pieces of crispy bacon, and tomato slices covered in creamy Mornay sauce and baked in the oven or under the broiler until the bread is crisp and the sauce begins to brown. It is sometimes called a  Louisville Hot Brown or Kentucky Hot Brown. It was created by Chef Fred Schmidt in the 1920’s at the Brown Hotel in Louisville, Kentucky.

How to Make Hot Brown Wontons

This dish is super easy to make with only a few simple ingredients. Start by making a roux. Melt butter in a medium saucepan over medium heat. Stir in all-purpose flour, and cook, stirring constantly, for about 1 minute. Whisk in milk and heavy whipping cream. Bring to a low boil and simmer for 2 minutes on medium-low heat. Season with kosher salt and black pepper. Remove from heat, and stir in parmesan cheese. Allow the sauce to cool slightly.

Spray a muffin tin with cooking spray. Press a wonton wrapper in each muffin cup. Spray wontons with cooking spray and bake in the oven until they start to turn golden brown. Remove from oven.

In a large bowl, stir together roasted turkey, cooked chopped bacon, and mornay suace. Spoon the turkey mixture into the partially baked wontons. Sprinkle chopped tomatoes over the turkey. Bake in the oven for an additional 10 to 15 minutes, until bubbly. Garnish the wontons with parsley.

  • Variations:
    • Substitute swiss cheese, American cheese, or white cheddar cheese.
    • Add mushrooms to the filling.
    • Add a pinch of nutmeg to the cheese sauce for extra flavor.
  • Can substitute turkey bacon.
  • Can Hot Brown Wontons be made in advance? Yes. Partially bake the wontons and add the chicken filling. Cover the muffin pans and refrigerate until ready to bake.
    • You can also mix up the filling and refrigerate it until you are ready to bake and assemble the chicken bites.
  • Can Hot Brown be frozen? Yes!  Bake the wonton wrappers and add the filling. Cool completely. Place the partially baked wontons on a baking sheet and place them in the freezer. Transfer frozen wontons to a freezer bag and freeze for up to 3 months.
    • When ready to bake, thaw and bake on a baking sheet for 10 to 15 minutes, until heated through.
  • Store leftovers in an airtight container in the refrigerator.

Ingredients:

Mornay Sauce

Kentucky Hot Brown Bites

  • 24 wonton wrappers
  • cup finely chopped turkey
  • cup mornay sauce
  • ½ cup cooked chopped bacon
  • 1 small tomato, diced

Instructions:

Mornay Sauce

  • Melt butter in a heavy-bottomed saucepan over medium-high heat. Stir in flour, and cook, stirring constantly, about 1 minute. (Do not let the mixture brown.)
  • Add milk and heavy cream, whisking constantly. Bring to a low boil, and cook, stirring constantly, for about 2 minutes more. Season with salt, and pepper.
  • Remove from heat, and stir in cheese. Allow to cool slightly.

Wontons

  • Preheat oven to 350ºF. Spray a muffin pan with cooking spray. Press wonton wrappers into muffin cups.
  • Bake wontons for 5 to 7 minutes, just until the edges of the wonton wrapper start to turn golden brown. Remove from the oven.
  • In a medium bowl combine chopped turkey, bacon, and mornay sauce.
  • Scoop turkey mixture into wonton cups. Top with diced tomatoes.
  • Bake for 10 – 13 minutes or until bubbly.
