How to Make Impossible Pecan Pie
This pie is effortless to make. Sprinkle chopped pecans in the bottom of a pie plate. In a blender, combine heavy cream, corn syrup, melted butter, vanilla, eggs, brown sugar, and Bisquick. Pulse until smooth. Pour batter into the pie plate and bake until set.
- I used Karo light corn syrup. Feel free to use dark corn syrup if you prefer.
- You can substitute milk for the heavy cream.
- For a gluten-free pie, use gluten-free Bisquick.
- Can Impossible Pecan Pie be made in advance? Yes! You can bake the pie a day or two before serving. Store the pie covered in the refrigerator. Remove from the refrigerator at least 30 minutes before serving.

Impossible Pecan Pie
Ingredients:
- 1½ cups chopped pecans
- ¾ cup heavy whipping cream
- ¾ cup corn syrup
- ¼ cup butter melted
- 2 tsp vanilla
- 4 large eggs
- ¾ cup packed brown sugar
- ½ cup Bisquick baking mix
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9-inch deep-dish pie plate with cooking spray.
- Sprinkle chopped pecans in the bottom of the pie plate.
- Place remaining ingredients in a blender and pulse until smooth, about 15 to 30 seconds.
- Pour batter over pecans in the pie plate.
- Bake for 50 to 60 minutes, until the center of the pie is set.
- Allow the pie to cool completely before serving. Store the cooled pie in the refrigerator.

sounds good – can i use a muffin tin instead of pie plate? being single, that is a LOT of pie for 1. can i freeze any of this?
You can freeze the baked pie.
