Easy Mexican Casserole

Mexican food is a favorite at our house. I could live on pizza, tacos, and chicken. This taco pie recipe is a childhood favorite. It has been a million years since I made this for dinner, so I decided to make it for dinner last week. OMG! This was a HUGE hit! I can’t believe this fell off the dinner rotation. It is super easy to make and tastes great!

How to Make Impossibly Easy Taco Pie

I coaxed Chicken Legs into the kitchen to help make dinner.  He wasn’t overly enthusiastic when I told him what we were having for dinner, but I just ignored him because I knew he would like it.  

This Impossible Taco Pie was very quick and easy to make. The original recipe is from the back of the Bisquick box. It is good, but I put my own spin on their recipe. Start with browning some ground beef in the skillet. Add some salsa and taco seasoning to the beef and let it simmer a few minutes. Spread the taco meat in a pie plate, top with cheese. Next, whisk together eggs, milk, and Bisquick. Pour the batter over the taco meat and bake. That is it!

What to Serve with Impossible Taco Pie

This casserole is kind of like a taco quiche. We both absolutely LOVED this dish. Chicken Legs almost ate the whole thing by himself. We topped the pie with lettuce, tomato, and jalapenos. SO good!

Equipment:

Ingredients:

  • 1 pound ground beef
  • 1 Tbsp minced onion flakes
  • 1 (1-oz) envelope taco seasoning mix
  • ¾ cup salsa
  • ½ cup Bisquick
  • 1 cup milk
  • 2 eggs
  • 1 cup shredded cheddar cheese

Instructions:

  • Preheat oven to 400ºF. Grease 9-inch deep dish pie plate.
  • Cook beef and onion until beef is brown, drain. Stir in taco seasoning and salsa. Spread in pie plate.
  • Top with 1/2 cup cheese. Stir Bisquick, milk and eggs until blended. Pour into pie plate.
  • Bake for about 25 minutes, sprinkle with remaining cheese.
  • Bake additional 3-5 minutes, until cheese is melted. Serve with your favorite taco toppings.

Notes:

Can use ground turkey instead of ground beef.
Can use any shredded cheese in place of cheddar.

  2. If I double this recipe and put it in a 9×13 pan, how do you think that would affect the cook time? Do you think a 9×13 would be too big? I have a 6'3" 14 year old boy to feed so I pretty much have to cook for an army…lol
