Pressure Cooker Lasagna Soup Recipe

Soup is one of my favorite things to make in my Instant Pot. I love that everything cooks in the same pot and is ready in minutes. This Instant Pot Lasagna Soup recipe is one of my FAVORITE soups! OMG! It has all the flavors of lasagna in soup form with only a 6 minute cook time. You can’t beat that! I happen to LOVE lasagna, so, needless to say, I LOVE this soup. I love this soup so much that it is on the menu again this weekend. YUM! Add this delicious soup to your menu. It is sure to become a family favorite.

What is an Instant Pot?

Instant Pot is a name brand of an electric pressure cooker. Depending on the model, the Instant Pot can also be used as a slow-cooker, rice cooker, and yogurt maker.

What is a pressure cooker? A pressure cooker is a sealed pot with a lot of steam inside that builds up high pressure and helps food cook in a fraction of the time of the oven or stovetop.

  • The high pressure helps force liquid and moisture into the food quickly.
  • Food cooks faster under high pressure.
  • The extra liquid and moisture that the pressure adds help tough cuts of meat get very tender very quickly.

How to Make Instant Pot Lasagna Soup

This soup is effortless to make in the pressure cooker with only a few simple ingredients. Turn the Instant Pot on the Sauté setting. Cook Italian sausage in the pot until no longer pink. Add minced garlic cloves and cook for 30 seconds. Drain fat. Turn off the pressure cooker and add a small amount of the beef broth and scrape the bottom of the pot with a wooden spoon to avoid getting a BURN notice. Add minced onion, Italian seasoning, sugar, tomato paste, tomato sauce, remaining beef broth, and spaghetti sauce. Stir to combine. Add uncooked pasta to the pot. Press the pasta down into the pot so it is completely covered with the liquid. Lock the Instant Pot lid in place and seal. Cook on manual or high pressure for 6 minutes. Quick release the pressure, stir and enjoy.

  • Can substitute lean ground beef or ground turkey. You will just want to add a little extra Italian seasoning to the soup.
  • My jarred marinara sauce of choice is always Trader Joe Roasted Garlic Marinara. It has a green label. If you don’t have a Trader Joe’s nearby, I also like Rao’s and La Damiglia Del Grosso sauces. You can find those at the grocery store.
  • Can substitute chicken broth or vegetable broth for the beef broth.
  • Feel free to add chopped bell pepper and fresh diced onions to the soup.
  • You can use any pasta shape that you prefer. Bowtie, elbow, fusilli or broken lasagna noodles all work great.
  • Store leftovers in an airtight container in the refrigerator.

What to serve with Italian Soup

We like to top the hot soup with some red pepper flakes, fresh basil, mozzarella cheese, and a dollop of ricotta cheese. This is a hearty soup. You don’t need a lot of side dishes to go with this. We usually just whip up some crusty garlic bread. It is PERFECT for dunking in the soup. Comfort food at its best!

  1. This was the first recipe I tried in my instapot. I used double the amount of pasta than what it called for and maybe that was where I went wrong. It turned out more like a goulash than a soup. My husband was still crazy about it, and it was really good! It just didn’t turn out like I thought it would. Don’t get me wrong, it was still amazing! All your recipes are!
