Quick Instant Pot Pork Stew Recipe

This Instant Pot Southwestern Pork Stew has been on repeat at our house. It really hits the spot on a chilly night. Shredded pork tenderloin, salsa verde, corn, black beans, and Rotel. YUM! This has SO much amazing flavor and it is a snap to make in the Instant Pot. It is ready from start to finish in under 30 minutes with only about 5 minutes of hands-on time. Whip up some homemade cornbread while the stew is cooking and you are set!

We ate this stew for dinner and reheated the leftovers for lunch during the week. The stew was equally delicious (if not better) reheated. This is already back on the menu this weekend.

How to Make Instant Pot Pork Stew

This stew is super easy to make. Start with browning a pork tenderloin in the Instant Pot. Turn off the pressure cooker. Add some chicken broth and scrape up any brown bits on the bottom of the insert. Next, add the remaining ingredients – green salsa verde, corn, black beans, Rotel tomatoes, and seasoning. Close and seal the Instant Pot lid. Cook on high pressure and quick release the steam. Remove the pork and shred with two forks. Add the pork back to the Instant Pot. Whisk together some cornstarch and water. Add the mixture to the pot to thicken the stew up and serve.

Tips for Making Pork Stew in the Electric Pressure Cooker

  • I used pork tenderloin in this stew. It weighed about 1.25 pounds. Make sure to use a tenderloin and not the larger pork loin.
  • Make sure to trim the silver skin from the tenderloin. The silver skin is a silvery-white sheen membrane on the pork tenderloins that doesn’t break down when the pork is cooked. Use a knife to carefully trim the silver skin off the pork tenderloin before adding it to the Instant Pot.
  • It is essential to add a little chicken broth to the Instant Pot insert after browning the pork and scrape up any brown bits that are stuck on the bottom of this insert. This will help ensure that you don’t get a BURN notice.
  • Is Instant Pot Southwestern Pork Stew spicy? There is a little kick to this stew. If you are worried about the heat, use a can of MILD Rotel diced tomatoes and green chiles. You can also substitute a can of plain diced tomatoes.
  • You can substitute cooked pulled pork for the pork tenderloin if desired.
  • Can I make Southwestern Pork Stew on the stovetop? Sure! Sauté the tenderloin in a Dutch Oven. Add the remaining ingredients and cook until the pork is tender. Shred the pork with two forks and serve.
  • Can I make Southwestern Pork Stew in the slow cooker? Yes! Simply place all the ingredients in the crockpot and cook on LOW all day. Before serving, shred the pork tenderloin with two forks.
  • You can freeze the leftover stew for a quick meal later. To reheat, thaw and heat on the stove or in the microwave. You may need to add additional chicken broth to thin out the stew.
  • Is pork stew gluten-free? Yes. Make sure to use a gluten-free salsa verde such as Herdez for a gluten-free stew.

Ingredients:

  • 1 (1½-lb) pork tenderloin, cut into 4 pieces
  • 1 Tbsp oil
  • 2 cups salsa verde
  • 2 cups chicken broth
  • 1 (10-oz) can Rotel diced tomatoes and green chilies undrained
  • 1 (12-oz) bag frozen corn kernels
  • 1 (15-oz) can black beans, drained and rinsed
  • 2 tsp chili powder
  • 2 Tbsp dried minced onion
  • 1 tsp garlic powder
  • 1 tsp cumin
  • salt and pepper, to taste
  • 2 Tbsp corn starch
  • ¼ cup water

Instructions:

  • Turn the Instant Pot on SAUTÉ. Add oil and cook pork for 2 minutes per side.
  • Turn off Instant Pot. Add ½ cup of chicken broth and scrape up any browned bits stuck to the bottom of the insert.
  • Add remaining chicken broth, Rotel, salsa, verde, corn, black beans, chili powder, onion, garlic, cumin, salt, and pepper.
  • Lock Instant Pot lid in place and seal. Cook on MANUAL or HIGH PRESSURE for 10 minutes.
  • Quick-release pressure. Remove pork and shred with two forks. Add pork back to the Instant Pot.
  • Whisk together corn starch and water. Stir into stew.
  • Turn the Instant Pot on SAUTÉ and cook 2 or 3 minutes until thickened.

Notes:

  • Use a knife to carefully trim the silver skin off the pork tenderloin before adding it to the Instant Pot.
  • There is no need to thaw the corn before adding it to the Instant Pot.

  2. This was delicious and a great way to use up my carnitas meat for a last minute dinner. I accidentally purchased and had Bush’s seasoned black beans in which I did not rinse and it really added to the flavor. I didn’t have salsa verde so I just dumped in some chunky red salsa. I’ll definitely make it again!

  3. Recipe tasted wonderful! A little dollop of sour cream really sets it off. I did have a slight problem with my pork not being tender enough to shred easily (it was fairly tough in places), so I struggled with that. Should I have maybe done a few more minutes of pressure cook time? I used an 8qt Instant Pot.

    Substitutions: I did not have salsa verde, so I used a medium salsa in its place. I also didn’t have any dried minced onion, so I put in about a cup of freshly diced onion.

    This is definitely going in my normal rotation. 🙂
