Jack Nicklaus’ Ultimate Steak Marinade

We grill out steaks a lot. I actually prefer our home-cooked steaks to the fancy steakhouses. Chicken Legs seasons and cooks them just the way I like it! This recipe comes from Jack Nicklaus’ new cookbook. I saw this recipe and wanted to give it a try. The base of the marinade is red wine and chili sauce. It was so different than our usual marinades that I had to give it a try.

How to Make Steak Marinade with Red Wine

This marinade is super easy to make. Simply whisk together red wine, chili sauce, red wine vinegar, Worcestershire sauce, onion, garlic, salt, pepper, and a bay leaf. Pour the marinade over the steaks and refrigerate at least one hour up to overnight. Remove the steaks from the marinade and cook.

  • Can use this marinade on any cut of steak – filet, ribeye, sirloin, T-Bone, skirt steak, flank steak.
  • I used Heinz Chili Sauce – it is near the ketchup.

  • You can make the marinade in advance and refrigerate it up to a week.

This was really, really good. We loved all the flavors from the marinade. We will definitely use this marinade again. Jack’s Ultimate Steak Marinade just might be our new “go-to” steak marinade!

Jack's Ultimate Steak Marinade – steaks marinated in red wine, chili sauce, red wine vinegar, Worcestershire sauce, onion, garlic, salt, pepper, and a bay leaf. This marinade is seriously delicious! Our new go-to marinade. TONS of great flavor!!

Ingredients:

  • ½ cup red wine
  • ½ cup chili sauce
  • 2 Tbsp vegetable oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp dried minced onion flakes
  • 2 Tbsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 bay leaf
  • 4 steaks

Instructions:

  • Whisk together all ingredients and pour over steaks. Marinate in refrigerator an hour to overnight.
  • Remove steaks from marinade and cook to desired temperature.

Notes:

  1. I’m from California. Single mom but love to grill and after doing my own tasting spent years deciding on a marinade unique to my taste preference and figured out my own recipe!! I had people shocked when I told them my marinade recipe!! so I searched to see if anyonelse made a similar marinade recipe!! And found you! I used all same ingredients except I used minced garlic and depending on my mood would substitute the chili sauce for A1 sauce or just add both! I been told worshishire sauce is only for pork and chicken but it never failed me for any beef steak cut. Same for bay leafs… I also add about 3 fresh plucked basil Leafs. And it comes out amazing every time! A friend once told me “if you want the best steak you must love the stark so massage the stead with your ingredients” and so I do for every ingredient and them do the same when it’s in the gallon bag with the whole marinade. I Then let my steak marinate for at least 24 hrs min up to 48hrs max. when it’s time to grill I take my steak out to sit out for at least an hour prior to putting on the grill. I like my grill super hot and a lower heat on another side of the grill (I have a smoker charcoal grill) but don’t wanna over do the heat to fast as it’s better to lead the charcoals into a hot heat without just flames that’ll go out quickly. But back to the steak! When I start I sear ALL SIDES not just top or bottom but all sides should be seared. I’ll than add butter to the top and when I flip I’ll do the same! And then cover the grill again allowing ventilation and the steaks in a less high temp area of the charcoals and then I Use the remainder marinated juice to just go over both sides near the last few minutes of grilling. I then let it rest. Best marinade in my life I’m so addicted to it! And I’m glad I found someonelse who discovered this awesome combination for a marinade!! I used this for all cuts of meat for grilling to pan to oven! It’s best for grilling or pan tho. But no matter what cut the steak is it’s a guarantee my “go to” no screw up marinade! I’m no professional nor have money to waste but this is defiantly a recipe I would use on the most expensive cut I ever got!

  2. Is the chili sauce hot chili sauce, like Siracha or ketchup based, like Heinz chili sauce, that I use to make cocktail sauce with?

  3. So, I meant what I said! I needed this on my plate, and I had this on my plate! My husband and kids chose a ribeye and I chose a NY Strip Steak. This marinade is AMAZING!!! I loved this so much, and it paired so well with the wine I bought specifically for this dinner, that I am including it and a link here on my next Wine Pairing Wednesday post which is this week on the 28th.
