Jalapeño Popper Corn Salad – crazy delicious creamy corn salad. I made this for a cookout and it was gone in a flash! I should have doubled the recipe!! Corn, jalapeños, bacon, mayonnaise, cream cheese, sour cream, onion, garlic, chili powder, paprika, pepper jack cheese, and cheddar cheese. Can make in advance and refrigerate overnight. A real crowd pleaser!

Jalapeno Popper Corn Salad is Great for a Crowd

Summer is unofficially here and we couldn’t be happier. We love cooking on the grill and having friends over. We had a few people over for Memorial Day earlier this week. It was so much fun! We grilled some delicious burgers, but the star of the cookout was this yummy Jalapeño Popper Corn Salad. I should have doubled the recipe because it didn’t last long!

How to Make Corn Salad

This corn salad is super simple to make. Simply chop the jalapenos and combine them with the remaining ingredients. It literally took me about 5 minutes to make this yummy side dish.

To cut down on the heat in this dish, make sure to discard the seeds and membranes in the jalapenos. I also recommend wearing gloves when chopping the peppers and don’t touch your face! It will BURN!

For the corn, you can use fresh corn kernels, thawed frozen corn kernel or canned corn. You can use white or yellow corn or a combination of both. Just use your favorite type of corn.

Can Corn Salad be Made in Advance?

Absolutely! This corn salad can be made a day in advance and refrigerated until ready to serve. This will keep 3 or 4 days in the refrigerator. Perfect for parties and potlucks!

What to Serve with Jalapeno Popper Corn Salad

This corn salad is great for a crowd. It is a great make-ahead side dish for potlucks, cookouts, and tailgating this fall. The flavors in this creamy salad are crazy delicious! Corn, cheese, jalapenos, and bacon tossed in a creamy dressing with cumin, garlic, chili powder, and paprika. YUM! We like to serve this as a side dish, but it would also be great as a dip with some Fritos!

Ingredients:

Instructions:

  • Chop jalapenos, discarding membranes and seeds.
  • Combine jalapenos with remaining ingredients.
  • Chill for 2 hours before serving.

Notes:

Top corn salad with additional cooked bacon when serving.
Can make in advance and refrigerate up to 4 days.
Can substitute Monterey jack cheese for pepper jack cheese to reduce the heat.
Can serve as a side dish or as a dip with Frito corn chips.

  1. My son made this last night for our cookout and it was a huge hit…everyone was devouring it! Only thing different he did- grilled the corn first and it was so yummy and made a great change of flavor to the recipe! This will now be his go to to bring to cookouts!

  2. I made this using fresh/then frozen corn on the cob. Cut the corn off and then sautéed it in a cast iron skillet. Made the recipe exactly as is and it was delicious! I prefer it served warm as a side dish but also cold with some corn chips!

  3. This is probably a “dumb” question, but this recipe is to be served chilled, not heated right??

  4. i am going to make this with Flamin’ Jack “cheese from sames club ,you can cut out all the cheese and use this for all the heat you like , it has colby and monterey jack cheese with Jalapeno, Habanero and chipotle peppers in it . Good Luck . not HOT

  7. 2 oz cream cheese. Is this cubed or softened and mixed with mayo and sour cream? I was wondering if more might be better?

  8. I think there is too much mayo and sour cream
    (I never thought I would say that) to the amount of corn. I used 4 1/2 cups of corn and it just looked all white. I added in another cup and a half and it looks a little better but next I would probably start out with 1/2 cup of each and add as needed. It is quite delicious though!

  9. Made this tonight but subbed chickpeas for corn and added a can of (drained) Rotel. Really delicious.
