Grilled Chicken is a favorite at our house. I am always thinking of new flavor combinations for marinades. This Key Lime marinade is a favorite! The chicken is so tender and juicy and tastes great! It is packed full of flavor from lots of herbs and has a little tanginess from the key lime juice. It is ridiculously good!
How to Grill Chicken
This chicken is very easy to make. Start with pounding the chicken breasts to an even thickness. Gently pound the chicken with a meat mallet until it is all the same thickness. Pounding the chicken will ensure that the chicken cooks evenly and you don’t have a piece of half juicy and half dry chicken.
Once the chicken has been pounded, place it in a gallon ziplock bag, and prepare the marinade. Whisk together canola oil, key lime juice, salt, paprika, garlic, basil, onion, and thyme. Pour the marinade over the chicken and let it marinate in the refrigerator overnight.
About an hour before you cook the chicken, take it out of the marinade and let it drain. This will help prevent any flareups on the grill from the oil in the marinade. Prepare the grill and cook the chicken until it reaches an internal temperature of 165ºF.
What to Serve with Key Lime Grilled Chicken

Key Lime Grilled Chicken
Ingredients:
- 6 boneless skinless chicken breasts
- 1 cup vegetable oil
- ½ cup key lime juice
- 1 Tbs salt
- 1 tsp paprika
- 2 tsp dried basil
- 2 tsp onion powder
- ½ tsp thyme leaves, crushed
- 1 tsp garlic powder
Instructions:
- Pound chicken to an even thickness. Place in a ziplock bag.
- Mix together oil, key lime juice, salt, paprika, basil, onion powder, thyme, and garlic powder. Pour mixture over chicken and marinate overnight in the refrigerator.
- Remove chicken from marinade 1 hour before cooking.
- Prepare grill. Cook chicken until it reaches an internal temperature of 165ºF.
