Super easy to make – black-eyed peas, bell peppers, and red onion tossed in balsamic vinegar, olive oil, sugar, salt, and pepper. Serve with chips or saltines. It also makes a great side dish. We LOVE this easy black-eyed pea salad.

This recipe comes from Lulu’s in Gulf Shores, AL. Lulu’s is a popular restaurant on the Gulf Coast and is owned by Lulu Buffet. I had the pleasure of eating at Lulu’s on my last trip to the beach and fell in love with all the food. I especially loved the LA Caviar. It is Lulu’s take on Cowboy Caviar Dip. OMG. So freaking delicious! I took one bite and knew I had to make this at home.
How to Make Lower Alabama Caviar Dip
I ordered Lulu’s cookbook before we finished eating lunch. It has all of the delicious recipes from her restaurant, including the LA Caviar. This dip is super easy to make. Start with rinsing and draining canned black-eyed peas. Next, chop a trio of bell peppers, a red onion, and cherry tomatoes. Whisk together the dressing – balsamic vinegar, olive oil, sugar, salt, and pepper. Toss it all together and pop it in the fridge for a couple of hours to let the flavors come together. Super easy!
Cowboy Caviar for a Crowd
This makes a TON of dip. It is perfect for parties and potlucks. You can make this ahead of time refrigerate it until you are ready to serve. You can also keep leftovers for about a week in the refrigerator. While this is a dip, we like to serve this as a black-eyed pea salad. This is SOOOOO good! Chicken Legs has already requested that I make this again next week.

LA Caviar Dip

Ingredients:
Dip
- 4 (15-oz) cans black-eyed peas, rinsed and drained
- 1 chopped green bell pepper
- 1 chopped yellow bell pepper
- 1 chopped red bell pepper
- 1 cup chopped red onion
- 1½ cups cherry tomatoes, quartered
- ½ cup finely chopped fresh parsley
Dressing
- ¾ cup balsamic vinegar
- ½ cup extra virgin olive oil
- ¼ cup sugar
- 2 tsp salt
- 1 tsp black pepper
Instructions:
- Place black-eyed peas in a large bowl. Add chopped bell peppers, onions, tomatoes, and parsley.
- Combine all dressing ingredients in a jar; cover tightly, and shake vigorously to dissolve sugar.
- Pour dressing over top and toss well. Cover, and refrigerate for at least 2 hours before serving.
- Serve with tortilla chips or saltine crackers.
