Lite Alfredo Sauce – no-one will ever guess this is light!! SO good! Better than any restaurant. Add chicken for a complete meal! Milk, ricotta cheese, greek yogurt, onion, garlic, salt, nutmeg, olive oil, flour, parmesan cheese and pasta. Can make and store in the refrigerator for up to a week! Great weeknight meal!!
This recipe from Cuisine at Home is a great guilt-free alfredo sauce. We absolutely loved this version. I would have never guessed this was low cal/low fat. It is really creamy and full of flavor. It is also extremely easy to make. The base of the sauce can be prepared up to a week in advance. You could blend it up on Sunday and serve it any night of the week. This is the only alfredo sauce I will make from now on. We served this sauce with some simple grilled garlic chicken. It was a fantastic meal!
Give this a try for Valentines Day – it will help balance out all the sweet treats that you might happen to indulge in.

2 Tbsp dried minced onion flakes
-
2 Tbsp minced garlic
-
1 tsp kosher salt
-
½ tsp ground nutmeg
-
¼ cup extra virgin olive oil
-
¼ cup all-purpose flour
-
½ cup grated Parmesan cheese
-
black pepper
-
reserved pasta water
-
1 lb pasta, cooked and drained
instructions:
-
Blend milk, ricotta, yogurt, onion, garlic, salt and nutmeg in a blender or food processor until smooth. At this point, the mixture may be stored in an airtight container in the refrigerator for up to a week.
-
Heat oil in large saute pan over medium heat. Whisk in flour until smooth. Whisk in blended mixture until smooth. Simmer sauce until it thickens, about 8 minutes. Stir in Parmesan cheese and pepper. If the sauce gets too thick, thin it out with a little pasta water. Stir in cooked pasta.
I love our alfredo sauces but I am 99.99% certain that none of them are low fat, lol. We will have to give this one a try.
You convinced me, it sounds VERY good!
As with your other recipes, this is one I will be trying! I love pasta, and I love alfredo sauce and I love eating healthy! Thanks for all the good recipes! Teri Dingler
