Easy Cheeseburger Bites for Parties

I’ve had this recipe on my list of things to make for years. I finally got around to making them and I can not believe I waited so long. OMG! These Long Boy Burger Bites are ridiculous. I made these for our football party recently and they only lasted about 5 minutes. This is pure comfort food!

Now, you might be asking “What is a Long Boy Burger?” It is basically an oven-baked meatloaf sandwich. The unusual thing about the recipe is that you don’t precook the meat mixture. It bakes along with the rolls and it is amazing! And NO, the bread doesn’t get soggy.

How to Make Long Boy Burger Bites

These burger bites are very easy to make. Start with splitting a package of Hawaiian rolls and plate them cut side up on a baking sheet. Pop the rolls in the oven for a couple of minutes to brown. Next, mix together ground beef, egg, BBQ sauce, onion, garlic powder, crushed cornflakes, and Montreal steak seasoning. Divide the meatloaf mixture into 24 balls and place them on top of the Hawaiian rolls. Spread some more BBQ sauce on top and bake. Add cheese and bake just until the cheese has melted.

  • Do NOT cook the ground beef. You are basically making meatballs that will cook on top of the rolls. I know it sounds weird, but it totally works!
  • Feel free to substitute ketchup for the BBQ sauce.
  • You can use any cheese you prefer. I used sharp cheddar. American, swiss, or provolone would all be delicious.
  • My favorite store-bought BBQ sauces are Sweet Baby Rays, Stubbs, and Williamson Brothers.
  • Can Long Boy Burger Bites be made in advance? Yes! You can assemble the meatballs ahead of time and refrigerate overnight.
  • Can Long Boy Burger Bites be frozen? I haven’t frozen this recipe, but I am sure it would be fine. You could freeze them unbaked and thaw and bake when ready.
  • If you don’t want to make small bite-sized burgers, feel free to substitute burger buns or hoagie buns. You may need to increase the baking time if baking larger burgers.

What to Serve with Cheeseburger Bites

As I said, these cheeseburger bites were a HUGE hit! We topped them with jalapeños and pickles. We like to dip them into some extra BBQ sauce, ranch dressing, or our yummy Jalapeño Ranch Dip! These hamburgers are not only great for parties, but they also make a great dinner! Serve them with some fries or coleslaw. YUM!

Ingredients:

  • Preheat oven to 450ºF.
  • Separate rolls into 12 individual rolls and cut in half lengthwise. Place on a baking sheet cut-side up. Spray with olive oil or cooking spray and bake 5 minutes.
  • Combine ground beef, egg, ¼ cup BBQ sauce, onion, garlic, Worcestershire sauce, crushed cornflakes, and steak seasoning.
  • Divide the meat mixture into 24 balls and place one on top of each roll. Press down slightly. Spread remaining ¼ cup BBQ sauce on top of meatballs.
  • Bake for 10 to 12 minutes. Remove from oven and top with cheese.
  • Bake an additional 3 to 5 minutes, until cheese has melted.

Notes:

  1. Made these today for the first time and my fiancée and I loved them! I used panko to bind these instead of cornflakes and I also didn’t cook them on the rolls like the recipe suggested. Even with a lean ground beef, a lot of fat cooked off so I’m glad I didn’t cook them on the rolls personally. I didn’t need to use dip or anything for these. They were perfect just as they were!

  2. Yum…I cannot wait to try these. Can you clarify for me something. Do you end up with 12 burgers or 24??? The recioe says you have 24 patties, but 12 buns??? Are the served open face so you get, 24 burgers??? Thanks

  3. These were so good and really very simple. I baked them for 10 minutes, added cheese and baked for additional 3 and the hamburger was cooked perfectly. However, my hawaiian buns were almost black on the bottom. I didn’t use parchment paper, do you think that was the reason?

    1. These were crazy good but I had the same problem with a black bottom. I did use a darker cookie sheet.. could that be it?
