This Low-Carb Chicken Fajita Soup is a new favorite! It has all the flavors of chicken fajitas in a comforting bowl of soup. Chicken, cream cheese, fajita seasoning, Ro-tel, onion, bell pepper, chili powder, cilantro, and chicken broth. Just toss everything in the slow cooker and voila dinner is ready! How to Make Low-Carb Chicken Fajita Soup

This soup is effortless to make in the slow cooker with only a few simple ingredients. Place boneless chicken breasts in the crockpot. Sprinkle fajita seasoning over the chicken. Add chopped onion, bell pepper, Rotel diced tomatoes and green chiles, chili powder, cilantro, and chicken broth. Place a block of cream cheese on top of the ingredients. Cover the slow cooker and cook on LOW for 6 to 8 hours. Remove the chicken breasts from the slow cooker and shred them with two forks. Whisk the soup to get the cream cheese fully incorporated. Stir in the shredded chicken and serve.

  • I use Badia Fajita Seasoning. It has zero carbs. I find it in the International Foods section at the grocery store.

  • 2 large boneless skinless chicken breasts
  • 1 (8-oz) packages cream cheese
  • 3 Tbsp chicken fajita seasoning
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 (10-oz) can Rotel diced tomatoes and green chilies
  • Tbsp chili powder
