Happy New Year!!!! If you are like me, you probably overindulged over the past few weeks. It’s time to get back into the swing of things. I ate WAY too many carbs – rolls, dressing, cookies! OMG! It was delicious, but it is time to reel it back in. We are getting back to regular eating with this yummy Low-Carb Crack Chicken Casserole. Eggs, cream, chicken, cheddar, bacon, and ranch. YUM!
This casserole is super easy to make. It literally takes about 5 minutes to whip up. To get this ready to bake so quickly, I use rotisserie chicken. It is a HUGE time saver! I always have some pulled rotisserie chicken in the freezer for easy casseroles like this one. I also buy precooked real bacon bits in bulk at Costco. Perfect!
We absolutely LOVED this Low-Carb Crack Chicken Casserole. It is one of our go-to meals all year, not just in January. We ate this for lunch and leftover for dinner the same night. It was really, really good. We loved all the flavors! We also loved that it was ready to eat in about 30 minutes!
I know a lot of you like make-ahead and freezer meals. This casserole can be frozen unbaked or baked for a quick meal later. If you freeze it unbaked, thaw it in the refrigerator overnight before baking. I just pop it in the fridge before I go to bed and it is ready to bake for dinner the next day.
Low-Carb Crack Chicken Casserole
Ingredients:
- 2 cups cooked chopped chicken
- 1/2 pound bacon cooked and chopped
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup prepared Ranch dressing
Instructions:
- Preheat oven to 350ºF. Lightly spray an 8×8-inch or 11×7-inch pan with cooking spray.
- Spread cooked chicken and cooked bacon in the bottom of prepared pan. Top with shredded cheese.
- Whisk together eggs, heavy cream and ranch dressing. Pour on top of chicken mixture.
- Bake, uncovered, for 30 to 35 minutes.

Ok. So, here's the deal. This recipe is AHHHHHHmazing! I was very hesitant to make this because of the egg. I was nervous it would taste eggy as some reviewers have mentioned, but I didn't find this to be the case at all. I beat everything very well before pouring over the casserole. I did make a few additions…I used a little more chicken than called for and it was rotisserie chicken, I also added a few chopped red, green & orange peppers, and some mushrooms. Mine turned out a little watery but I'm chalking that up to all the added veggies. For us, this is definitely a keeper! Thank you so much for the wonderful and SO simple recipe. Oh, and I froze it, thawed it, baked it.
The raw mushrooms will definitely make it watery. Try cooking them ahead of time for a few minutes before adding to the casserole. Glad you enjoyed it!
I made this but left out the bacon and added a pound of thick sliced rough chopped mushrooms and broccoli flowerets. I steamed the broccoli first. Really turned out nice.
Costco also has packaged rotisserie chicken breasts!!! Like…packaged by them using the rotisserie chickens they make

Can you substitute the heavy cream with something else?
I never have cream in the house so I always substitute either whole milk or canned evaporated milk. Seems to always work just fine in every recipe I've done it with.
I live in a very small town with limited groceries available so I asked Uncle Google the same. You can use half and half instead.
While I appreciate a good recipe I am always amazed at the description of the ingredient amounts. One half bottle of ranch dressing tells us nothing other than use some ranch dressing as the amount varies as much as 100% for bottles of dressing.

Maybe whisk the egg mixture more. You could try a handheld mixer to get everything really combined. Also try baking it 5 minutes less and seeing if it is done.
Mine was too. I used chicken breasts, but maybe next time I'll use thighs, which are moister and more flavor. IMHO
I’ve cooking a lot more & really needed something new for dinner. I made this last night & I t was a hit with my husband! I will make it again maybe with some onion & green peppers added.

You won't even know an egg is in it. Also I only had 2 eggs and it still came out great
Hi there – you mentioned letting it defrost overnight if you froze it unbaked. If you cooked it and froze it – can it be microwaved from a frozen state (like other microwavable meals?) Hope that makes sense ?
