Pin This RecipeHappy New Year!!!! If you are like me, you probably overindulged over the past few weeks. It’s time to get back into the swing of things. I ate WAY too many carbs – rolls, dressing, cookies! OMG! It was delicious, but it is time to reel it back in. We are getting back to regular eating with this yummy Low-Carb Crack Chicken Casserole. Eggs, cream, chicken, cheddar, bacon, and ranch. YUM!
This casserole is super easy to make. It literally takes about 5 minutes to whip up. To get this ready to bake so quickly, I use rotisserie chicken. It is a HUGE time saver! I always have some pulled rotisserie chicken in the freezer for easy casseroles like this one. I also buy precooked real bacon bits in bulk at Costco. Perfect!
We absolutely LOVED this Low-Carb Crack Chicken Casserole. It is one of our go-to meals all year, not just in January. We ate this for lunch and leftover for dinner the same night. It was really, really good. We loved all the flavors! We also loved that it was ready to eat in about 30 minutes!
I know a lot of you like make-ahead and freezer meals. This casserole can be frozen unbaked or baked for a quick meal later. If you freeze it unbaked, thaw it in the refrigerator overnight before baking. I just pop it in the fridge before I go to bed and it is ready to bake for dinner the next day.

Hi. can you use a packet of ranch seasoning or does it have to be prepared ranch dressing?
This recipe uses prepared ranch dressing – from a bottle or homemade
Do you think you could sub greek yougurt for the heavy cream?
Love this!! I added a small can of mild green chili’s. Amazing!!
Did I miss the nutritional info somewhere? Need to know the carb count per serving and how many servings. Thank you. I’m making for dinner tonight. Sounds yummy!
Here are two sites online that are good for calculating nutritional information. Keep in mind both sites may or may not be accurate. Information can vary based on the actual ingredients you used and the brands that you use:

My husband can’t do bacon,so can you make without? Do I need to cut back on other ingredients?
you can leave it out
Do you normally use shredded or cubed chicken for this recipe? My local grocery store doesn’t have packaged rotassaire chicken. Thanks in advance.
Any cooked chopped chicken will work just fine. Shredded or cubed is fine. It is up to you.
Has anyone tried this without the egg?
I don’t suggest doing that. It is an egg-based dish.
Made this tonight for my husband and me, and it was DELICIOUS!! We both went back for seconds! I added broccoli and green bell pepper (previously cooked – to prevent the casserole from being too watery) to give us some vegetables and because it was what I had on hand. I did have to add an extra 5mins or so to the cooking time, but it was so good!! I will definitely be making this again!!
I made this and added cooked fresh mushrooms, it was delicious. I was wondering if you have the nutrition info. Mainly how many carbs and what is a serving size. Thanks, Sue
This was great & it puffed up like a little soufflé.
Hello,
How many chicken breasts should I cook to get 2 cups of chopped chicken? Do you make your own ranch dressing or use store bought?
Thanks!
It will just depend on the size of your chicken breasts – maybe 1 or 2. I used store-bought Ranch dressing.
Froze a batch of this – thawed overnight in refrigerator. Baked for 35 minutes. Was still very runny in the center, so baked another 15 minutes which was too long. Dried out too much. Next time, I’ll only bake for an additional two minutes.
This is a wonderful dish! Note that if you freeze it, you’ll need to cook it longer than 35 minutes. I just put mine back in for another 15 minutes. Center was still runny.
I love this recipe! It is so versatile. I hate washing dishes so whatever veggie I’m having gets thrown in the casserole. To night it was sautéed mushrooms but I’ve also used corn, green beans, and Brussel sprouts cut in half and sautéed now the bacon grease. I can’t wait to try the Caesar dressing. My husband’s favorite ❤️
Tried this tonight for dinner and was really good. I did however, cut back to only 2 eggs, 1/4 cup of heavy cream and used light ranch dressing. Very filling and will definitely make it again.
Made it loved it added tsp of Tetta garlic spread.. amazing
So i made this tonight and it was very dry! Any ideas or suggestions as to why and what might have happened??
The only thing I can think of is that it might have been overcooked. All ovens are different. Maybe try reducing the cooking time a little – 5 or 10 minutes. Use a toothpick to make sure the center is set. If it comes out clean, it is done.
Made this tonight…..doubled the recipe to have leftovers. FANTASTIC AND ABSOLUTELY DELICIOUS!!!!!
Sounds delicious can't wait to try it.
What is the consistency supposed to be like. Mine came out more like Ricotta cheese and less like scrambled eggs. Is this right? It’s good, just want to make sure I cooked it long enough.
is it normal ranch dressing you would buy at a store? Or low carb ranch dressing?
your choice. Hidden Valley Ranch only has 2 carbs per serving.
Great idea! I will definitely try that next time.
Ok. So, here's the deal. This recipe is AHHHHHHmazing! I was very hesitant to make this because of the egg. I was nervous it would taste eggy as some reviewers have mentioned, but I didn't find this to be the case at all. I beat everything very well before pouring over the casserole. I did make a few additions…I used a little more chicken than called for and it was rotisserie chicken, I also added a few chopped red, green & orange peppers, and some mushrooms. Mine turned out a little watery but I'm chalking that up to all the added veggies. For us, this is definitely a keeper! Thank you so much for the wonderful and SO simple recipe. Oh, and I froze it, thawed it, baked it.
The raw mushrooms will definitely make it watery. Try cooking them ahead of time for a few minutes before adding to the casserole. Glad you enjoyed it!
I made this but left out the bacon and added a pound of thick sliced rough chopped mushrooms and broccoli flowerets. I steamed the broccoli first. Really turned out nice.
Costco also has packaged rotisserie chicken breasts!!! Like…packaged by them using the rotisserie chickens they make
Costco has the BEST rotisserie chicken!
What can you use instead of ranch dressing?
Caesar dressing?
You know a recipe is a keeper when your hubby goes back for thirds and says numerous times how good it is. Thanks a million for this easy, tasty dish!
Could you use ground chicken in place of the rotisserie?
Can you substitute the heavy cream with something else?
I never have cream in the house so I always substitute either whole milk or canned evaporated milk. Seems to always work just fine in every recipe I've done it with.
I live in a very small town with limited groceries available so I asked Uncle Google the same. You can use half and half instead.
While I appreciate a good recipe I am always amazed at the description of the ingredient amounts. One half bottle of ranch dressing tells us nothing other than use some ranch dressing as the amount varies as much as 100% for bottles of dressing.
It is a half a CUP of ranch dressing
How about adding chopped broccoli?
Sounds good!
Judy, it says 1/2 cup. Not 1/2 bottle!
My husband doesn’t like cheddar, will another kind of grated cheese taste good in this dish?
I’m sure whatever you normally use in place of cheddar for him will be fine.
Do you think you could somehow make this in a crockpot?
I added 1 onion diced and 8 oz. of sliced mushrooms. Loved the recipe.
Good info. I want to add broccoli instead of the shrooms.
does this turn into a crustless quiche-like casserole?
Mine was real eggy and kind of dry. Any ideas?
Maybe whisk the egg mixture more. You could try a handheld mixer to get everything really combined. Also try baking it 5 minutes less and seeing if it is done.
Mine was too. I used chicken breasts, but maybe next time I'll use thighs, which are moister and more flavor. IMHO
I’ve cooking a lot more & really needed something new for dinner. I made this last night & I t was a hit with my husband! I will make it again maybe with some onion & green peppers added.
Thanks!
Can you taste the eggs in this? I don't like eggs but will eat them when disguised.
I’m the same way & I really enjoyed this. I won’t touch a plain cooked egg.
You won't even know an egg is in it. Also I only had 2 eggs and it still came out great
Hi there – you mentioned letting it defrost overnight if you froze it unbaked. If you cooked it and froze it – can it be microwaved from a frozen state (like other microwavable meals?) Hope that makes sense ?
Sounds like that would work. Enjoy
Happy Healthy New Year Steph to you and your family! ????????????
I can't wait to see all the yummy food that you make this year!????
Have a great week and weekend coming up!
