Happy New Year!!!! If you are like me, you probably overindulged over the past few weeks. It’s time to get back into the swing of things. I ate WAY too many carbs – rolls, dressing, cookies! OMG! It was delicious, but it is time to reel it back in. We are getting back to regular eating with this yummy Low-Carb Crack Chicken Casserole. Eggs, cream, chicken, cheddar, bacon, and ranch. YUM!

This casserole is super easy to make. It literally takes about 5 minutes to whip up. To get this ready to bake so quickly, I use rotisserie chicken. It is a HUGE time saver! I always have some pulled rotisserie chicken in the freezer for easy casseroles like this one. I also buy precooked real bacon bits in bulk at Costco. Perfect!

We absolutely LOVED this Low-Carb Crack Chicken Casserole. It is one of our go-to meals all year, not just in January. We ate this for lunch and leftover for dinner the same night. It was really, really good. We loved all the flavors! We also loved that it was ready to eat in about 30 minutes!

I know a lot of you like make-ahead and freezer meals. This casserole can be frozen unbaked or baked for a quick meal later. If you freeze it unbaked, thaw it in the refrigerator overnight before baking. I just pop it in the fridge before I go to bed and it is ready to bake for dinner the next day.

Ingredients:

  • 2 cups cooked chopped chicken
  • 1/2 pound bacon cooked and chopped
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup prepared Ranch dressing

Instructions:

  • Preheat oven to 350ºF. Lightly spray an 8×8-inch or 11×7-inch pan with cooking spray.
  • Spread cooked chicken and cooked bacon in the bottom of prepared pan. Top with shredded cheese.
  • Whisk together eggs, heavy cream and ranch dressing. Pour on top of chicken mixture.
  • Bake, uncovered, for 30 to 35 minutes.

    1. It will just depend on the size of your chicken breasts – maybe 1 or 2. I used store-bought Ranch dressing.

  3. Froze a batch of this – thawed overnight in refrigerator. Baked for 35 minutes. Was still very runny in the center, so baked another 15 minutes which was too long. Dried out too much. Next time, I’ll only bake for an additional two minutes.

  4. This is a wonderful dish! Note that if you freeze it, you’ll need to cook it longer than 35 minutes. I just put mine back in for another 15 minutes. Center was still runny.

  5. I love this recipe! It is so versatile. I hate washing dishes so whatever veggie I’m having gets thrown in the casserole. To night it was sautéed mushrooms but I’ve also used corn, green beans, and Brussel sprouts cut in half and sautéed now the bacon grease. I can’t wait to try the Caesar dressing. My husband’s favorite ❤️

  6. Tried this tonight for dinner and was really good. I did however, cut back to only 2 eggs, 1/4 cup of heavy cream and used light ranch dressing. Very filling and will definitely make it again.

    1. The only thing I can think of is that it might have been overcooked. All ovens are different. Maybe try reducing the cooking time a little – 5 or 10 minutes. Use a toothpick to make sure the center is set. If it comes out clean, it is done.

  7. What is the consistency supposed to be like. Mine came out more like Ricotta cheese and less like scrambled eggs. Is this right? It’s good, just want to make sure I cooked it long enough.
