What does Crack mean? If a recipe has crack in the title it means that it has cheddar, bacon, and ranch in the recipe. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck. The flavor combination is the best. This tetrazzini is no exception. SO good!
How to Make Low-Carb Crack Chicken & Rice Soup
This soup is super easy to make. Combine chicken broth, cooked chicken, ranch dressing mix, carrots, and celery. Bring to a boil. Reduce heat to simmer and add cheddar cheese and cauliflower rice. Cook until the cheese has melted and the cauliflower is cooked. That’s it! Easy Peasy!
- I used rotisserie chicken for the cooked chicken in this soup.

- Do NOT make the ranch dressing. You are only using the seasoning packet.

- Feel free to substitute turkey bacon for the regular pork bacon.
- There is no need to thaw the cauliflower rice before adding it to the soup. It will cook in the soup mixture just fine.
- Can I make Low-Carb Crack Chicken & Rice Soup in the slow cooker? Sure! Add everything but the cheese and cauliflower rice to the crockpot and cook on LOW for 6 to 8 hours. Add the cheese and cauliflower rice and cook for an additional 20 to 30 minutes.
- Can I freeze Low-Carb Crack Chicken & Rice Soup? Yes! Allow the soup to cool completely and store in a freezer bag. Place in the freezer and freeze. To reheat, thaw completely, and reheat in the microwave or stovetop.

Low-Carb Crack Chicken and Rice Soup
Equipment:
Ingredients:
- 3 cups chopped cooked chicken
- 6 cups chicken broth
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup chopped cooked bacon
- 1 (1-oz) package Original Hidden Valley Ranch Salad Dressing & Seasoning mix
- 1 (10-oz) package frozen cauliflower rice
- 2 cups shredded cheddar cheese
Instructions:
- Combine chicken, broth, carrots, celery, bacon, and ranch mix in a large Dutch oven.
- Bring to a boil. Reduce heat to simmer and cook 20 minutes.
- Add cheese and cauliflower rice. Cook an additional 10 to 15 minutes, until cheese is melted and cauliflower rice is cooked.
Notes:
- I used a rotisserie chicken for the cooked bacon.
- 1 cup chopped cooked bacon is equivalent to about 1 pound of raw bacon.
