Crustless Chicken Quiche with Cottage Cheese

This Low-Carb Million Dollar Chicken Casserole has been on repeat at our house. This is basically a crustless chicken quiche and it is ridiculously good! We LOVE quiche at our house and this is one of our favorite recipes. Chicken, mozzarella, eggs, sour cream, cream cheese, and cottage cheese. SO easy to make and tastes great! Whip up a salad and dinner is done!

How to Make Low-Carb Million Dollar Chicken Casserole

This casserole is very easy to make. Start with chopping some cooked chicken and placing it in a baking dish. Top the chicken with mozzarella cheese. Next, in the bowl of a food processor, combine eggs, cottage cheese, cream cheese, sour cream, garlic salt, onion powder, and white pepper until smooth. Pour the egg mixture over the chicken and cheese. Pop the casserole in the oven and bake until set.

  • I used rotisserie chicken for the cooked chicken in this recipe.

  • You can add cooked mushrooms, peppers, or well-drained frozen spinach to the casserole.

  • To reheat after freezing, thaw completely and reheat in the microwave or covered in the oven at 350º for 35 to 45 minutes, until warm.

What to Serve with Chicken Casserole

We absolutely LOVED this casserole. It is one of our go-to meals. We ate this for lunch and had the leftovers for dinner the same night. It was really, really good. We loved all the flavors! We also loved that it was ready to eat in about an hour. Serve this with a salad or green beans and a low-carb biscuit. Even if you aren’t doing a low-carb/keto diet, you are going to LOVE this easy casserole.

Instructions:

  • Preheat the oven to 325ºF. Spray an 9×9-inch baking dish with cooking spray.
  • Place cooked chicken in the bottom of the prepared dish. Top with cheese.
  • In the bowl of a food processor, combine the eggs, cream cheese, sour cream, cottage cheese, garlic salt, onion powder, and pepper. Blend in the food processor until the mixture is smooth.
  • Pour the egg mixture over the chicken and cheese.
  • Bake until set, about 50 to 60 minutes.
  • Allow quiche to cool for 5 to 10 minutes before cutting.

  1. This was very tasty! Added onion and chopped spinach layer b/t the mozzarella and egg mix. Didn’t have cottage cheese so I used ricotta and topped with ground chipotle chili pepper. Used an immersion blender. Fast, easy and simple clean-up. Made it in the air fryer. Thanks. Hit that spot that eating low carb often needs to be filled.

  3. I loved the texture of this casserole but for myself and my husband it was a bit bland as printed. Maybe next time i would add come stir fried carrots, onions and peppers.

  4. Made this a couple of nights ago – a success for me. I added finely diced onions, about 1/4 cup, half can of diced green chilies for little more zing. It took an extra 10 minutes to bake probably due to the added moisture. I’ll keep this recipe on hand and may add a few more spices next time. Was great with a green salad.

      It’s much easier to blend using a food processor, but I think you CAN make it without one. The next best thing would be to use a “stand” mixer. If you don’t have one, then try a hand mixer. It may help to let the cream cheese, cottage cheese and sour cream sit in your mixing bowl for a bit, to help with the blending process.
