Only takes a few minutes to make and it is ready to eat in about 30 minutes. Whip up a green salad or asparagus and dinner is done! You will never miss the carbs!
How to Make Low-Carb Monterey Chicken Casserole
This casserole is very easy to make with only a few simple ingredients. Place cooked chopped chicken in a baking dish that has been sprayed with nonstick cooking spray. Top the chicken with Monterey jack cheese and spinach. In a medium bowl, whisk together eggs, sour cream, heavy whipping cream, garlic powder, and onion powder until smooth. Season with salt and black pepper to taste. Pour the egg mixture over the chicken and cheese in the casserole dish. Bake in a preheated oven until set.

Low-Carb Monterey Chicken Casserole
Ingredients:
- 2 cups cooked chopped chicken
- 1/2 (9-oz) package frozen spinach, thawed and well drained
- 1 cup shredded Monterey Jack cheese
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup refrigerated sour cream French Onion Dip
- ½ tsp onion power
- ¼ tsp garlic powder
- salt and pepper, to taste
Instructions:
- Preheat oven to 350ºF. Lightly spray an 8×8-inch or 11×7-inch pan with cooking spray.
- Spread cooked chicken and spinach in the bottom of the prepared pan. Top with shredded cheese.
- Whisk together eggs, heavy cream, French onion dip, onion powder, garlic powder, salt and pepper. Pour egg mixture on top of the chicken mixture.
- Bake, uncovered, for 30 to 35 minutes, until set.
