This Low-Fat Greek Lemon Chicken & Rice Soup is AMAZING! Out of all the low-fat, low-carb recipes I made this month, this was the one that Chicken Legs loved the most. He is still talking about this delicious soup! I have it on the menu again this weekend. The flavors are incredible in this soup. The lemon and Greek seasoning really make the soup.
How to Make Lemon Chicken & Rice Soup
This soup is stupid easy to make. In a large stockpot combine cooked chicken, lemon juice, chicken broth, celery, carrots, Greek seasoning, cream of chicken soup, garlic, and rice. Bring to a boil and simmer until the rice is cooked.
- I used Cavendar’s Greek Seasoning in this recipe. You can find it in the spice section at the grocery store and Walmart.
- I used rotisserie chicken for the cooked chicken in this soup and it worked great.
- Is Lemon Chicken & Rice Soup gluten-free? Yes! Use a can of gluten-free cream of chicken soup and salt-free Cavendar’s Greek Seasoning.
- Can Lemon Chicken & Rice Soup be made in the slow cooker? Yes! Place all the ingredients in the crockpot and cook on LOW for 4 to 6 hours, or until the rice is tender.
- Can Lemon Chicken & Rice Soup be frozen? You can freeze the leftovers for a quick meal later.

Low-Fat Greek Lemon Chicken & Rice Soup
Equipment:
Ingredients:
- 2½ cups chopped cooked chicken
- 5½ cups chicken broth
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 to 3 tsp Greek seasoning
- 1 (10.5-oz) cans Unsalted Cream of Chicken Soup
- 2 garlic cloves minced
- ¼ cup lemon juice
- ⅔ cup uncooked long-grain white rice
Instructions:
- Combine all ingredients in a large Dutch oven.
- Bring to a boil. Reduce heat to simmer and cook 20 minutes, until rice is cooked.
Notes:
- I used Cavendar’s Greek Seasoning in this recipe. You can find it in the spice section at the grocery store and Walmart.

I really like this! Still working on getting the rice perfect in the slow cooker, but far from that point and the soup is still amazing! I am adding Papa Gyros for seasoning, which I bought off Amazon Prime and it is free of MSG!

This was delicious! I could not find Greek seasoning in our stores (weird) so I found a recipe for it online. It might taste a little different than the kind you use. Some recipes called for cinnamon but I did not use it in mine. Very tasty! I did add a little bit of spinach near the end as I had some to use up.
How would adding cooked rice at the end instead of using uncooked during the cooking process work?
I am not sure as I haven’t tired that. If you try it, you may need to reduce the amount of liquid in the soup.
Would cream of mushroom soup work!?
Sure – any cream of soup should work fine.
I really enjoy Greek food and this looks like an easy and super delicious variation of a soup I like. Putting the ingredients on this weekends grocery shopping list now!

I haven't tried it with lime but I would be interested to know how it turns out if you do try. Personally, I think I would use it as a garnish in a sparkling beverage served along with the soup. 🙂

do you think it would work okay with brown rice?
Yes – you will just need to adjust the cooking time. Brown rice takes longer to cook than white rice.
